Description

A very good cask conditioned ale strain, this extremely flocculant yeast produces distinctly malty beers. Attenuation levels are typically less than most other yeast strains which results in a slightly sweeter finish. Ales produced with this strain tend to be fruity, increasingly so with higher fermentation temperatures of 70-74°F (21-23° C). A thorough diacetyl rest is recommended after fermentation is complete. Bright beers are easily achieved within days without any filtration.

Good yeast
This is probably my favorite ale yeast. I t attenuated well, floculates cleanly and just plain makes good beer.

Great For English Beers
This is an excellent yeast for English Ales. I use it all the time in English Bitters and Porters and also in Pumpkin Beer and other styles, that I want the malt to come through and have some English style esters and flavor incorporated in the final product. The yeast will leave a residual fruitiness and or tartness to the beer and has a unique yeasty ester to it. This yeast also will finish fast and ferment very quickly and then drop out in clumps in the bottom of the fermenter, leaving very clear beer. Reported to be the yeast strain used in the famous Fullers Brewery.

Used in the Sweet Stout kit.
I was a little miffed that, when it arrived, it was already 2 months old, which means it only had about 60% of the viability left. I thought, ordering through MoreBeer, that yeast turnover would be greater, so freshness would not be an issue.

It did swell up after smacking. But, to be on the safe side, I made a 1/2 gallon starter. Beer fermented with no issues and is the best kit that I've made!

Great yeast for a lot of styles
This is the best yeast around. Steadily ferments out in 3-4 days, and then floccs rapidly leaving crystal clear beer in days rather than weeks with 1056. Very easy strain to harvest and propagate. Forgiving of a little warmer temp than some others. I made 8 generations on my last pitch with nothing off whatsoever. Works great in pales and IPA's, just a touch of fruit ester to make the flavor profile a little more complex. Has steadily finished at 1.008-1.01 for me with a little dextrose in the wort and good oxygenation. I wish I could give it 6 stars, and someone would have told me about it when I first started brewing.

great for hot weather
This is what I use when I know my apartment is going to be too hot for 1056. Gives you a few extra degrees without getting extra off flavors.

Truly Traditional Bitters/Milds
My favorite strain for classic British beers: ESB, mild, bitter, even IPA. Flavor profile is great, attenuation levels are perfect, and the beer is bright after a few days in the keg.
