Description

  • 1098 allows malt and hop character to dominate the profile
  • Ferments dry and crisp, producing well-balanced beers with a clean and neutral finish
  • Activator Smack-Pack System™ "proofs" the yeast and shortens lag time when it hits your wort
  • When smacked, the Activator™ packet releases sugars and nutrients to initiate the culture's metabolism

  • Although beneficial, cultures do not need to be activated prior to inoculation

This yeast allows malt and hop character to dominate the profile. It ferments dry and crisp, slightly tart, fruity and well balanced. Beers will finish clean and neutral. Ferments well down to 64°F (18°C).

I used this yeast with a full grain Imperial stout. It's been 24 hours and zero activity from the yeast! Should I be worried?

BEST ANSWER: Yes, I would be worried. I usually make a starter first and usually see activity in the starter and in the wort after pitching the starter within a few hours. If you are watching for bubbling in the airlock, it is possible that there is a small leak in the starter, stopper, or if you are fermenting in a bucket, there can easily be a leak between the bucket and the lid, so check these out.
If the smack-pack expanded after smacking, that would indicate that the yeast was alive and viable.
I have not observed that this yeast is noticeably slower to ferment than other yeasts.

Great results
I was a little worried after I pitched. I rushed the cooling a little, so the wort was a little warm still. pitched the yeast expecting a slow start on ferment. less than 12 hours later it was going strong. can't wait to taste the result.

Arrived dead
Although I have had great results with this yeast before, this packet arrived dead, so it never "started" in the packet or in the brewing bucket.

Very good yeast
I used this in a holiday beer and it attenuated vey aggressively. In fact, it blew off my airlock twice and I had to switch to a blow off tube. Full attenuation reached after about 4 days. I let it rest a couple more to make sure it finished out, but the pre-aged taste of the beer is terrific.

Used in my Jalapeno beer - was a hit
I used this when brewing my jalapeno beer and allowed the jalapeno flavor to be present without overpowering. My Friends really enjoyed the jalapeno beer

Makes a nice Pale Ale
I have used this on a couple of pale ales and it gives it a really nice flavor, if you like Mirror Pond you will like this for your pale's
