German Hefeweizen | 5 Gallon Beer Recipe Kit | Extract

This German-style Wheat Beer has a lovely blond color and distinct hazy appearance in the glass. The flavor for German Hefeweizen is primarily based on the flavor of the very specialized Hefeweizen yeast, so be sure to select one of these strains for fermentation. Just be ready for a vigorous fermentation! This beer is known to pop off airlocks if there isn't enough room in the fermenter. This kit does not contain any steeping grain, using 100% Bavarian Wheat malt extract. A dash of Northern Brewer hops provides just enough bitterness to balance the malt and yeast character. Despite the simple recipe, this is one of our most popular ingredient kits. Our German Hefeweizen is a customer favorite that has brought home many ribbons.

If you want to put a little spin on this recipe, add 8 oz of Caramunich and 4 oz of Chocolate malt to make a Dunkelweizen!

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

So I chose the white labs Hefeweizen liquid yeast pack. Is 1 pack of that yeast fine to use for this 5 gallon brew?

BEST ANSWER: Roger's answer above is excellent. The German Hefeweizen yeasts are known for being very vigorous fermenters. Since the signature hefeweizen flavors come primarily from the yeast you can experiment with different fermentation temperatures or pitching more/less yeast to encourage the development of the specific clove or banana flavors you would like. This is a great recipe to play around with as it has a lot to teach!
I've brewed this before but it turned out quite darker than I had hoped. Would putting the first 3 pounds of DME in at the beginning of the boil and the last 3 pounds towards the last 10 minutes result in a lighter beer with similar flavor?

Much darker than pictured.
The yeast shines with the familiar tastes associated with the style. Maybe because I went with lme but the color is darker than others I've brewed from other recipes. I know it didn't scorch, so i have no clue why it is so much darker. Kind of throws of friends expecting a straw colored wheat beer.

Abv too high
Not a fan. Came out with too much alcohol. Followed instructions to the letter. OG 1.060 fg 1.010. ANV 6.8. Used Fetmentis WB-06. Some clove, but overpowered by the booziness. Everyone else seems to love it so maybe I screwed up.

Easy, delicious kit
Used DME. I find this tastes better than LME. This is an easy, delicious, and fast kit. Quick brew day because it is an easy recipe. Used WLP300. After fermentation, I cold crash for only a day because hefeweizen is supposed to be cloudy anyways, so quicker to the glass. I will be buying this kit again many times in the future years.

Our first Hefe
The flavor of this ale Hefe is something else. We get a little bit of smoky flavor, plus the wheat, and a fruity finish.

Great Hefeweizen
This beer is super simple to make but turns out great. 3 weeks in primary and then kegged. Nice banana/clove flavor. It takes virtually identical to a local craft version, only darker in color. WIll definitely make again.

Smooth clean beer
