The classic and most popular German wheat beer strain used worldwide. Produces a balance of banana esters and clove phenolics. Sulfur is commonly produced but will dissipate with conditioning. This strain is very powdery and will remain in suspension for an extended amount of time following attenuation. This is true top cropping yeast and requires fermenter headspace of 33%.

Flocculation: low
Attenuation: 73-77%
Temperature Range: 64-75° F (18-24° C)
Alcohol Tolerance: approximately 10% ABV

Perfect for the job at hand
Used this to ferment a Sahti with a 1.082 OG. Direct pitched and had a full krausen within 24 hours. Gave me a great banana character at 64F.

Good Hefeweizen yeast.
The yeast arrived still cold with the ice pack. The beer fermented well and is in a keg on CO2. I tasted my heffeweiz as I transferred it into the keg...delicious. I can't wait to try it carbonated. I'd recommend it to anyone.

Must have!
If you're going to make a Hefeweizen, this is a must have! It's the only way to get the notes of clove and banana that Hefeweizen's are known for.

best hefeweizen yeast. period.
there isn't much else to say honestly. from the oldest brewery on the planet, and it just so happens that they make the best traditional wheat on it as well. grab a sixer of Weihenstephaner Hefeweizen...then realize that you can make your own and have it come really really close. 60/40 German wheat and pils malts and off you go

Using it now
The ease of use for the smack pack is too nice compared to White Labs vials. As long as the pack is not too swelled when you get it this is so much better than doing a starter.

authentic German ale yeast!
Having spent time in Germany in Holland where I had the opportunity to sample Weihenstephaner ale, I was interested in brewing a similar style. The recipe was very straightforward and the star here is the yeast. Spicy and estery and very authentic. Great served with a slice of lemon as they do in Holland.

Great results!
I fermented with this on MoreBeer's german hefeweizen all-grain kit and had outstanding results! One of my favorite batches to date, which I plan to brew again this summer and use this yeast again.
