I used this with a roggenbier to try and capture the phenolics without going with a hefeweizen yeast. Pitched a 3 liter starter into a 5-gallon batch, then fermented at 52-55 degrees for two weeks. Fermentation started within 12 hours and proceeded well. Bubblegum phenolics from the airlock but not really noticeable in the finished beer. It cleaned up very nicely after a 3 day diacetyl rest at 65-68. Attenuation was good and hit target FG. Lagering now but early tasting show it to be a very clean ferment. Hard to say if I would use it again or just go with the standard German Lager yeast in the future.
