Description

This is a great strain from White Labs that is used in the production of malt forward German Lagers. Makes a great Oktoberfest!

From Southern Germany, this yeast finishes malty with a slight ester profile. Use in beers such as Oktoberfest, Bock, and Dark Lagers.

Attenuation: 66-73%
Flocculation: Medium
Fermentation Temp: 50-55°F
Alcohol Tolerance: Medium-High

 

For best results we always recommend ordering an ice pack with your liquid yeast.
 

Please Note: When choosing an ice pack option beware that the liquid yeast will not arrive cold even when shipped together. Ice packs and insulated mailing options are designed to keep the yeast colder for longer during shipment, but they will not ensure that your yeast arrives cold. I used this with a roggenbier to try and capture the phenolics without going with a hefeweizen yeast. Pitched a 3 liter starter into a 5-gallon batch, then fermented at 52-55 degrees for two weeks. Fermentation started within 12 hours and proceeded well. Bubblegum phenolics from the airlock but not really noticeable in the finished beer. It cleaned up very nicely after a 3 day diacetyl rest at 65-68. Attenuation was good and hit target FG. Lagering now but early tasting show it to be a very clean ferment. Hard to say if I would use it again or just go with the standard German Lager yeast in the future.
