Have you ever wished you could crush your enemies and consume their life force!? .... yeah *cough* nor have we. But the same can't be said for the Juicy Brut! This maniacal monarch didn’t gain support for his claim to the throne through strategic wedding arrangements, nor did he bring his challengers to heel through deftly negotiated treaties. Oh, no. He conquered the realm using his dry, brutish nature and sheer force of juiciness. When the Juicy Brut enters the fray wielding his pulp-stained battle axe, he yawps but one maxim -- no quarter!

Juicy Brut IPA has a pronounced dry character with almost no malt sweetness, setting the stage for the Mosaic®, Amarillo® and Citra® hops to be on full display. Leaning heavily on whirlpool and post fermentation additions, the tropical flavor of these hops come bursting forth with aromas of lemon, orange, grapefruit, passionfruit and mango. We can offer only one piece of advice. Bend the knee and swear fealty to the Juicy Brut!

The Juicy Brut IPA instructions provided state to add he Ultra Ferm Enzyme to the fermenter along with the yeast. The While Labs packaging states to add the Ultra-Ferm to the mash-in. When should I actually add the Ultra-Ferm for the all gran kit?

BEST ANSWER: Follow the kit instructions and add when you pitch the yeast. I have tried both methods and found the best results, i.e. lower finishing gravity when adding it during fermentation.

Are you sure that this only needs 10 pounds of 2 row? I only get a calculated OG of 1.042 with that and the 1 pound of carapills. I need to add another pound of 2 row to get up to the 1.053 you guys expect.

BEST ANSWER: Target gravities for kits are awesome for benchmarking and trying to nail numbers, but it really comes down to your mash efficiency. Make sure you are stirring atleast every 15 minutes, and recirc if you can. - just ensure you have healthy yeast / starter if you are going to add to what is suggested by MB. The added beta-amalayze enzyme should ensure the yeast does their job to getting down to .001-.003.

Also - malt has been significantly more varied in kernel size the last 2 harvest seasons which makes it tough to be consistent in sugar extraction from brew to brew (especially brewing on a 60bbl system like at the brewery I work at) this may be a reason you are seeing difference in a recipe that was created probably 4-5 years ago.

Great Kit
This kit has gotten thumbs up from friends and other brewers. Very juicy on the front end and nice and dry on the finish. I'll definitely be purchasing again.

So far so good.
The brewing process went good. In the fermenter last stage. Gravity read down to 1.000. Can’t wait to get it in the keg and carved to try it. It smells amazing.

Excellent Brut IPA
This is an excellent brut! Followed directions, used WLP001 and added the Ultra-Ferm when yeast was pitched. I brew with a RIMS and my OG was higher than the kit indicated (1.064) but hit the FG (1.000). Great citrus nose with a dry, hoppy finish. Will definitely brew again.

Dry Citrus IPA? Yes please!
Pleased with my results. No surprises, exactly what I was hoping for. Hit target OG. With the use of WL001I find Orange, Mango and Grapefruit with a final gravity of 1.000=DRY! Though I’d argue I was reading .098. Self carbonated in the ole Fermentasaurus. This really dries me out, like leg cramps at 3 in the morning dried out. More then two in a sitting is pushing it for me. Which is fine, always three other brews pouring on my keezer ??. If you’re big into Brut IPA’s, I’d highly suggest you give this juicy Brut a try.

A real winner!
After weeks of delay I finally brewed this, using BIAB. Brew day went very well and I am a big convert to BIAB...primarily smooth process and easy cleanup. I fermented two weeks, then dry-hopped the last three ounces for an additional 5 days. I used 5 oz of dextrose instead of the usual 4 oz.in the bottling bucket (5 to16). On day 12 of aging I put a few bottles in the beer fridge and cooled for 24 hrs. The first pour was outstanding...good head and retention, great carbonation that lasted all through the quaff. Refreshing and dry with pleasant hop flavor that was citrusy without being grapefruity. My son, who is a homebrewer, had the second bottle. He said,"If this were at the store I would run out to buy it!"
19 days in fermenter, 15 days in bottle. Fruits of the labor.
Pumping from tank, through chiller directly into fermenter at 68 degrees.
During boil and hops addition.
Pump recirculating during Mash.
Stirring grains in mash.
