A new way to IPA! Firestone Walker's Hopnosis IPA represents one of the tastiest examples of a new beer style that is quickly gaining ground—Cold IPA. These beers feature the massive hopping schedules you'd expect from an IPA but are then fermented cold with a lager strain. This gives the beer a clean, crisp and crushable profile while allowing the hops to be on full display.  From the top of the boil to the final post fermentation dry hop, you'll find a long list of delicious hop varieties from the U.S. and New Zealand. One of the standouts is Mosaic® Cryo Hops® which are used as the biotransformation dry hop addition. Prepare to be absolutely mesmerized by Hopnosis IPA's explosion of tropical fruit flavors including mango, passionfruit, white grape, and lychee.

What Firestone Walker Has to Say About Hopnosis:
In early 2022, we launched Hopnosis as our next-generation West Coast-style IPA. Now the time has come to embrace an even more accurate stylistic moniker for Hopnosis: Cold IPA. While IPAs are typically fermented with ale yeasts, cold IPAs like Hopnosis are fermented with lager yeasts. Remember that IPA stands for India Pale Ale, so fermenting an IPA with lager yeasts signifies a break with tradition.

“When you use a lager yeast to ferment an IPA, you get a cleaner and less ester-driven aroma profile,” said Brewmaster Matt Brynildson. “The colder fermentation also creates a lighter backbone that helps accentuate the bright, tropical hops we’re using. So while Hopnosis offers a lot of things you love in a straight-ahead West Coast IPA, the lager yeast is what pushes it toward the Cold IPA style.”

As a result, Hopnosis rings all the bells of a Cold IPA: crisp and crushable, with a clean hop profile.

You must like a citrusy IPA
Followed all process and temp guidelines during mashing and fermentation, Used 1 pack of CellarScience German Dry Yeast. Kept beer at 60 degrees in fermenter during 4 weeks. At the 3 day dry hop additions, I dropped in a hop sack. The final 2 days prior to kegging, I dropped hops directly into the beer. Final gravity about 7.5%. Nice hazy citrus forward taste, but not bitter at all. After carbonation, a great beer. Very happy with this choice.
