The famous "Weihenstephan" yeast from Germany. W-34/70 is a widely used yeast strain that gives beer a clean finish and lets the malt really come through. Give this yeast a try and you might just have a new favorite!

This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.

Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

I love this yeast. It works amazingly well at ale temperatures. Ferments quick, dry, and warm. A week or 2 of lagering, followed by a day or two on biofine and you’ll have a clear, clean, tasty lager.

Amazing stuff!!
I Lagered my first ever homebrew because it was the middle of winter. I heard that lagers can be tricky but this stuff turned out beautifully!

3 weeks in the fermenter at 63 deg. 3 weeks bottled at 68 deg and this is BY FAR the best beer I have ever tasted - ever! The heavy sedimentation really left a clean final product with no filtering. I used US-05 on the next batch and did not end up with as clean a beer. I can’t wait till next winter to brew with this again!

I will definitely use this yeast again, and continue to experiment with it beyond Pilsner.
This was my first time using dry yeast and this one rocked! Beautiful fermentation on a Pilsner with 84.6% attenuation. No starter, pitched directly to wort at around 80 degrees.

Great Yeast!
I've brewed several lagers with this yeast and they have all turned out fantastic! Recently I pitched this yeast into a Munch Helles and then used the yeast cake to ferment a Maibock. Exceptional aroma and flavor - don't let anyone tell you dry yeast is inferior!

Warm lager ferment
I ferment this lager yeast at 68-72 and it is indistinguishable from ferment at 53-55... 7-10 day clearing with gelatin... clean and clear finish

Sulfur Bomb! But oh so good
Day 3-4 the ferm chamber smells like a big fart, but I think sulfur is an antioxidant, as with a few weeks of lagering this yeast produces excellent Pilsner and Oktoberfest. Even though not recommended I build up 1L starters and pitch.

Lagers made easy
I swear this yeast makes an awesome lager at 50 degrees and 80 degrees or anywhere in between. It’s foolproof.

Good lager character
Keep primary below 59 degrees and there is low ester production.
