The famous "Weihenstephan" yeast from Germany. W-34/70 is a widely used yeast strain that gives beer a clean finish and lets the malt really come through. Give this yeast a try and you might just have a new favorite!

This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.

Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

  • Alcohol Tolerance: 9-11% ABV
  • Optimum Fermentation Temp: 54-64°F

My go-to yeast for lagers
I've been using this exclusively for the last few years for all my German lagers using a 1L+1L (2-stage) yeast starter in my pressure fermenter, and this yeast consistently produces very clear lagers w/o any finings, and it's always amazingly active. I've even done lagers at room temp (68F-70F) at pressure and it's had a perfect taste every time. I usually make a Helles or Doppelbock, and this has become my go-to yeast since my last 2 Wyeast shipments went sideways. :(

Best for pressure fermentation
Great for pressure fermentation at room temp. I've double pitched and had quite tasty results but had a pro notice right away from tasting that I over pitched. So, going to try one packet for a 5 gal batch this time instead of two. But, I've pitched dry at multiple temps in the 65° to 78° range after cooling and immediately gassed up to 15psi with a spunding valve and it's been off to the races within 24 hours. Fermentation done in corny keg and PET kegs with floating dip tube. Let ferment 7 days, cold crash to 36° for a couple days and you have a lager in 10 days, a pretty clear lager in 21 days, and if you're lucky some left in a month. Not guaranteed. I let it sit on the yeast cake the whole time and it just gets tastier and clearer every day.

Never thought a dry yeast would outperform a liquid yeast ! (Vienna Lager)
I have been brewing since 1994, and exclusivly used liquid yeast that became easy to find since then.
I only used 2- 11.5 gram packs in a 11 gallon conical fermenter. Pitched in at 49F. then slowly ramped up to 64 over 10 days, held there 2 days, then slow cool 2-3 degress/day down to near freezing to Lager 2-3 weeks.
The results were spectacular! Very clean, maltiness from the Vienna malt and Pilsner malt shined through. Hops were snappy enough to balance the Malt, as the yeast played out so clean.
OG 1.050, EG 1.013

Really enjoy using this yeast
Been using this yeast a few times recently after I started pressure fermentation in a korny keg. Beer turns out great and I can get it done in about a week and the beer has been clean and crisp. Used it in a German Pilsner and the Morebeer Cerveza kit. The Cerveza needed some time to clear up but tasted great. Will use again.

Probably the best yeast on the planet...
Torture it at 48F for weeks. Or spund it at 68F and 15PSI for a few days. You'll get clean, crisp beer that does a great job highlighting hops.

I don't even bother having US-05 or Nottingham in my yeast library anymore. If I want a clean ale, I use this lager lol. If I want a real ale, I use boddington's or fullers.
