Erik Beer was the president of the local homebrew club, DOZE, for a number of years.  During that time, he created and perfected recipes for a number of different brews, this easy-drinking Cream Ale being one of them.  Featuring a blend of Pale and Pilsener Malt with some Flaked Maize thrown in to lighten things up, this beer is sure to be a hit with everyone you share it with. (If you share it at all!).  Hopping is light on this one, but definitely enough to balance things and make this brew go down smooth.

  • SRM (Color Range): 3-4
  • IBUs: 16-20
  • Estimated Alcohol Percentage: 5.2%

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

When do you introduce the flaked corn?

BEST ANSWER: Hi Peter - You would add the corn as if it was a steeping grain, so before you add the malt extract.

Two pints in and I ordered another kit!
Kit arrived well packaged and labeled. I went with the DME version, and full boil. I rushed it a little (brew day to glass in 9 days) but it came out amazing. Reminds me a lot of Spotted Cow, at least what I remember. I'm typically an all-grain brewer and steeping a pound of flaked corn without base malts seemed kinda silly it definitely shows through in the finished beer. Suspect this is also why corn sugar is added - to replicate what typically would happen in a full mash. It definitely pays off. Also, I left out a pound of DME because I wanted a lower starting gravity...1.049 and finished 1.009 with BRY-97. Had two pints and placed another order.

Nice cream ale

Too sweet, alcoholic and dark
Full disclosure: I don't think I added enough water to primary, maybe 1/2 to 3/4 of a gallon less than 5 gallons.

At 3 weeks, this beer is brown in color, and has this cloyingly sweet alcoholic finish in taste. It is more malty and porter-y in flavor. I know it's tough to rate a beer when so much of it is the brewer and what they did to it, but I just can't imagine that this is the same beer that others are describing in their reviews. It is not refreshing, it is not easy to drink, it is not a simple summer beer at all. Perhaps in time I will come to love it, but it's just taking up space in my kegerator right now.

I'll revisit it in a few weeks and update this review, but I definitely won't be brewing this beer again any time soon.

My go to summer brew!!
This kit is a fantastic beer. Ive brewed it twice with great results, it hardly lasts me more than a month. It is refreshing and you can taste the corn!. I recommend this to anyone who likes crisp clean full bodied beer!
