A typical fermentation with LalBrew  New England will produce tropical and fruity esters, notably stone fruits like peach. Through expression of a β-glucosidase enzyme, LalBrew New England can promote hop biotransformation and accentuate hop flavor and aroma. LalBrew New England exhibits medium to high attenuation with medium flocculation, making it a perfect choice for East Coast style ales.

Can anyone figure out how Lallemand can get all their yeasts into Beersmith?! (i.e., with a yeast add-on profile, etc)

BEST ANSWER: BeerSmith version 3 has a few Lallemand Yeasts already there (Ingredients>Yeast), though compared to what's listed on the Lallemand website, it seems outdated. About half of the Lallemand yeasts in BS are for wine, and some of the beer yeasts are not, or no longer, found on the Lallemand site. Several current Lallemand beer yeasts are there, though, including CBC-1, Diamond Lager, New England East Coast Ale Yeast, London English Style Ale (listed in BS as ESB, but I think it's the same), Munich (misspelled as "Munuch") Classic Wheat Beer, Nottingham High Performance Ale, and Windsor British Style. Newer Lallemand varieties such as Verdant IPA Ale Yeast, Kveik, and others are not in BS, but you can add them manually by selecting Ingredients>Yeast>Add Yeast and entering the information yourself. Any sort of bulk updating would, I assume involve BeerSmith talking directly to Lallemand.

Fantastic Dry Yeasst for NEIPA
Used this with Superstratum IPA recipe and it started off a little slow, but then finished very well. That is the only reason why I gave it 4 stars instead of 5. Provided this best result yet for any dry yeast I have tried with NEIPA styles. Really helps bring out the fruity, citrusy aromas you expect with a NEIPA. I will use this going forward for all my NEIPAs.

Laggy… doesn’t clean up well
Long lag time… lallemand recommends 2 packs of this stuff because of how laggy it is… finally got got going. When it was near complete I added the dry hops. After it finished I let it sit 3 days to clean up… it didn’t. Similar caramelly taste that I have on occasion gotten from so-4… I might try this yeast again… but probably not.

Not the old dry yeast
Its has been more than a decade since I used dry yeast because I wasn't impressed by the performance or the choices. I bought this for a small batch project that I wanted to do. And then I bought another. And then I started doing more and more small batch projects. I really like this yeast. It ferments fast. It settles well. The packaging is great (vacuum packed). But the real reason I bought it again is that, well it tastes great. It brings the hop flavor forward without making the beer overly bitter. It is my personal favorite for a lazy IPA.

Seems to be a good yeast
First time using this yeast. It was recommended for the NE Hazy Double IPA. I brewed it up a few days ago and it has been burping away for the last few days.

Great yeast, long lag time
This yeast is great. Wonderful fruity esters and low flocculation make this a great choice for hazy ipa. Like verdant dry yeast this yeast also finishes around 80% attenuation on first generations. Haven’t had any issues with diacetyl with this yeast. The only thing I dislike about this yeast is the long lag time. I experienced 48 hour lag times on 2 separate batches both at a steady 68f. This long lag time not only adds 2 extra days onto my brew schedule but also puts the wort at risk of contamination during those first days of lag time as the wort is highly susceptible in this stage. Its a great yeast but the long lag time makes me reach for other yeasts instead of this.

Lallemand tech sheet says this yeast has a 36 hr lag time and takes up to 7 days to complete fermentation. This is not necessarily a bad thing, just didn't know that before I pitched it.
