Fact: Firestone Walker has been named "Mid-Size Brewery of the Year" four times. Another fact: Pale 31 has won 10 Gold Medals since 2003 (yeah, that's one a year!).

The Pale 31 California Pale Ale is what some refer to as "The Perfect American Pale Ale". Light in body and color, but strong in hop flavor and aroma, this is one of those beers that most beer lovers will always want on tap. After having one, you'll most likely want another, and being under 5% ABV makes this a little more possible! The recipe consists of American 2-Row, Munich malt, and Carapils for added mouthfeel. The hops are a perfect blend of Fuggles, Chinook, Cascade and Centennial.

Firestone Walker's head brewer Matt Brynildson had worked on his Pale Ale recipe for a long time before being perfectly satisfied. We know that once you taste this beer, you'll agree with us that his hard work has definitely paid off!

Nice kit
I like the idea of the actual brewmaster designing the kit and the directions. It was a pretty straight forward extract kit, no big surprises. I just tasted it, and it was pretty close to the Firestone, and to verify I drank an official pale 31. It is truly in the ballpark of the official pale 31...I'm a happy camper, and the GF is enjoying it also!

Did well for me!
I followed the generic all grain instructions. Held the mash temperature at 150 deg. F. Well balanced flavor that approaches an IPA. Really noticed the complexity of this one that I haven't experienced with other kits. Used the recommended Wyeast 1098 liquid yeast.The grain bill is a little different. Got another one kit the way!

No specific instructions included.
When ordering I was assured all the specific mash temps and other procedures were included with the kit. Upon receipt I discovered the generic brew sheet so I called and was told the information I was promised are trade secrets and not available. I found some specific information on homebrewtalk.com regarding the required hop stand procedure and the beer is ok but not real close to the Pale 31.
In my opinion the advertising on this kit is very deceptive and unethical business practice since you will not "clone" the Pale 31 with the information provided.

I will still buy equipment and bulk ingredients from morebeer since I have not had any other problems with this company.

I guess MoreBeer listened to the complaints, since I bought one kit last week and it came with the following "Specific Recipe Information":

"Matt Brynildson recommends mashing at 145F for 45 minutes, then bringing your mash temperature to 155F for 5-10 minutes prior to mashing out at 168F"

No brewing steps included I guess you have to buy the kit and the book.
I bought the kit to do the pale31 and when I got the product no steps were included, no mash temps or nothing. I got only extract instructions for an all grain recipe and a two sided extract and all grain recipe sheet that stated only the ingredents and hop times. I called the 800 number to ask the mash temps for the recipe since it was a masters kit and the guy said "Its hard to match that beer and the typical pale ale is mashed from 150 to 154". So why do you sell it as a clone of a comercial beer when you dont recomend mash steps and 154 is way too high for a dry pale ale like FW31.

I called into CYBI specifically about this recipe and Matt said during the interview that he does a blend of 80% Mission Street Pale ale and 20% Double Barrel ale to create Pale 31.
