WildBrew™ Philly Sour is a pure strain of active dried yeast classified as Lachancea selected from nature by University of the Sciences in Philadelphia, PA. Philly Sour produces moderate amounts of lactic acid in addition to ethanol so you can ferment your beer and sour it in one simple step. This first yeast in the WildBrew™ series is a great choice for innovative, sessionable sour beers with refreshing acidity and notes of stone fruit. With high attenuation, high flocculation and good head retention, WildBrew™ Philly Sour is an ideal yeast for traditional styles such as Berliner Weisse, Gose, American Lambic Style, American Wild Ales and its resistance to hops make it perfect for Sour IPA’s.

Do I need to use a separate fermenting vessel & racking equipment for this, as I would when pitching bacteria in a sour beer?

Love it. Makes life easier.
If you like sours and interested in getting in the game, this is an easy way to do so. I never do kettle sours anymore because of this yeast.

Perfect level of acidity for my taste
I can make a batch of beer that tastes similar to a kettle sour but without the additional step of souring the wort to the proper ph level before adding yeast.

Quick and easy sour beer
Love this yeast. I love sour beers but sometimes they can be a hit or miss with kettle souring or other methods. This is an easy to use, consistent, and wonderful tasting yeast. It isn't as sour as other yeasts but it is still a good kind of sour and tartness. The stone fruit flavors really come out. I would recommend this to anyone wanting to get into sour beers.

Not a pleasant sour beer
I brewed a sour wheat beer with this yeast. It got mildly tart - maybe I should have used 2 packs instead of 1 in a 5 gal batch. What bothers me more than the lack of sourness is the red apple note that the yeast produces. I cannot think of a beer style in which this would be a welcome addition and it really clashed with the the American citrus-forward hops that I selected. I won't be in a rush to use this again.

This stuff makes awesome beer. From my experience, and from watching Dr. Farber's presentation with Lallemand, I would recommend using two packs for 5 gallons and letting it heat up to 77 and holding it there. It should finish in about 10 days. Also, add sugar or mash low for more acidity.
