Are your recipes for 5.5 gallons in the fermenter, thus yielding 5 gallons in the keg/bottle?
Gabriel David Kehner on May 3, 2020
BEST ANSWER: Yes. Just calculate boil off then adjust pre boil volume to finish with 5.5 gal into the fermenter.
Could I use Cellar Science CALI yeast for this? Would the flavor profile be appropriate?

Always on tap
I have been looking for a good red ale. This brew is soo good! I made some tweaks to it to include flaked oats, delayed some of the hop additions, and this brew has always came out delicious. It has a great aroma, color and taste. It's well balanced def my fav kit here, I've bought this kit several times now.

Brewed a beautiful beer
Fermented with California Ale V yeast, and finished at 1.018 from 1.059. Flavor is very nice and I really like the color. Picture is prior to carbonation. Mashed with 8 gallons of water BIAB.

Red Ale with Belgian Yest
This is a great value kit. I used Belgian Strong Ale yeast off-recipe since the intended yeast did not arrive on time. I therefore cannot evaluate the intended result of this red ale, but it resulted in a pleasant easy drinking red Belgian ale with a hint of tartness. It has more residual sweetness than I expected, and is darker red than I had expected. I'd try this kit again using proper yeast to let the malts speak for themselves better.

NIce Red Ale
This finished with a nice dark red color with the malt prominent. Slightly sweet with low hops bitterness. Fermentation started within 24 hours and was complete after about 3 days. Mine came out almost exactly as spec sheet. OG was 1.064 and FG 1.018. I will brew again.

Great Recipe...
I will brew this again-great hop flavor and nose. I like a hoppy beer but this is well balanced and not too overbearing on the hops.

Great beer with good body, color and balanced bitterness
My initial impression was that the bitterness overpowered the malt and there was a hop haze, but after 1 month in the keg the flavors really balanced out and the haze disappeared. I will be sorry when it's gone.
