Description

I scream, you scream, we all scream for...BEER!?

When discussions of a flavored stout kit came about, everyone had their own opinion.  "I think we could use a chocolate stout".  "A vanilla stout would be more unique".  "If we're going for unique, let's make a strawberry stout!".  After not being able to agree on one of the three, it hit one of us.  Combine them all to create an old school classic: Neapolitan!

In this kit, we include 4 oz of our Tcho cacao nibs, 4 oz of our natural strawberry flavoring, and 3 vanilla beans.  The result is an incredible flavor that will have you and your friends craving something new for dessert: The MoreBeer! Neapolitan Stout!

If you want to take this to a whole new level though, combine this beer with some ice cream to make a neapolitan float!

Our recipe kits DO NOT include grain bags, yeast or priming sugar. The recommended yeast(s) can be found below. All grains will come milled, unless you select unmilled base malts.

WLP001 - White Labs California Ale
WY1056 - Wyeast American

The stout itself was good.

I took about 32oz of the beer after fermentation, and separated it from the rest of the batch. (So it was ONLY exposed to the strawberry extract at the boil).

After primary fermentation was complete (no more Krausen), I added the 3 vanilla beans (prepped correctly), and the cacao nibs while in the secondary.

It sat for about 2.5 weeks more.

Then I kegged it, and let it sit (without CO2 carbonation) for two days. Then it was slow carbonated with CO2 for 3 days, then placed in biergas (75/25) for two days.

At 40°F and 2.15% per volume of CO2, the cascading was perfect.

But the smell or taste of vanilla or strawberries was non-existent. The chocolate was super subtle in taste.

If I were to try this again, I’d probably add double the amount of cacao nibs, and only place a 1/2 bottle of strawberry extract into the keg at legging-time. (Not during the boil).

As for the 32oz portion I saved without the strawberry and vanilla?

It was a bit snappier. Not as smooth. The chocolate smell and flavor was there. But still VERY subtle.

What I finally got was a good stout. Forget the vanilla or strawberry smells/taste. It was not there.

But the stout (having no vanilla or strawberry taste/smell) was still a great tasting stout...with a touch of chocolate.

Excellent stout
Best stout I've brewed. Lots of chocolate, subtle vanilla, tiny bit of strawberry. You can pick up each flavor individually but they blend perfectly. Biggest hit for a stout I've brewed. My friends want growler fills so I gotta keep this one on tap
