We are proud to offer our small Variable Volume Tanks from Speidel - a German manufacturer of premium quality stainless steel tanks for the wine industry. The tank body is fabricated from 304-type stainless steel, while the floating lid is made from 316-type stainless and has an inflatable bladder that pumps up to seal the wine off at any volume level. They can be used for primary fermentation as well as aging.

Built in Germany by Speidel, the world-class traditions of German engineering and craftsmanship are reflected in these tanks. These tanks arrive to you complete and ready to go out of the box after a little assembly. The tanks are fitted with 1/2 inch threaded ports to accomodate the included 1/2 inch stainless steel ball valve and 1/2 inch stainless plug. The plugged port is intended for use with an optional thermometer (MT500).

Note: Over tightening the airlock / orange bulk head can cause it to crack. Only thread the airlock down until it feels snug. Do not over tighten.

Does the total height include the height of the gauge on top? I am trying to use in temp controlled fridge but total height is 28 inches. What is the gauge for and can it be removed?

BEST ANSWER: The gauge is connected to the pump and displays the pressure of the tube that is sealing the lid. This pump-and-gauge combination has a hook for convenience allowing it to hang from the top of the tank but can be relocated anywhere within the length of the tubing between the pump and the lid. This is a variable tank, which means the lid can be placed anywhere inside the tank and "sealed" by inflating (via the pump) an innertube-type ring around the outside of the lid which presses into the interior sides of the tank creating the seal. You could easily place the pump (with the gauge) on top of the lid to reduce the maximum height necessary to equal that of the tank itself (understanding that you will need to pull the tank out to access the pump)..
To use the optional thermometer (MT500), do I need to buy a thermowell (e.g. FE619)?

BEST ANSWER: The thermowell mentioned above does not fit this tank FYI. I believe the FE622 is the correct size thermowell.
Can you tell me how to utilize the two ports on the tank? Can I attach a pump to either to fill the tank or do I need to go over the top?

BEST ANSWER: I see no reason why you couldn't pump through the ports, they take 1/2 inch fittings. I have a thermometer in the upper port (morewine #512) using a 2,1/2 inch probe so as not to interfere with punchdowns. It still extends into the tank and can be damaged if you are not careful. It is approximately 8 inches from tank bottom.
On the lower port, which is 2 inches from the bottom, I have installed a ball valve and a barb fitting ( parts#607 and #618 in morewine catalog.)
I made a false bottom stainless screen which sits above the ball valve and allows a gravity drain into carboys; similar to the Blichmann easy setup. The small amount of wine lost from not pressing is of no account to me.

I was planning on using these for bulk aging - then gravity racking through the valve on the bottom. That port is about 2.5” from the outside bottom which would leave slightly less than 2 gallons of wine in the tank. That seems like a lot. Can anyone comment/confirm? Can I order tanks with a lower port? I’d far rather gravity rack than pump. Thanks.

Orange Airlock Hack
I really love these Speidel tanks, and think the quality and workmanship is outstanding. I also agree with other reviewers that the orange airlock is a problem, and prone to loosening and breaking.

I solved this by installing a weldless compression stainless tri-clamp bulkhead assembly. It allows numerous options to close the opening in the tank lid. This bulkhead adapter is available on the MoreWine! site (part number H578); you will need to put that number in the search window to find it.

Great Tank, Poor Packaging
These tanks are awesome. Only complaint: pump and valve are shipped loose inside the tank. As a result my tank had quite a few dents in it from the inside out. The loose pump banging around inside the tank during shipping put quite a few dents in the tank.

Pretty happy with this
I have been making wine with 6 gal carboys and wide mouth fermenters. I just completed primary fermentation with 24 gals of cabernet sauvignon. Racked off the gross lees, and began malo fermentation. The size is perfect for my operation - I keep it on a small wheeled cart for easy movement. When empty of the wine and full of sludge, easy to clean. Racking off with the valve was easy and clean. I will be moving to more of these (too bad I missed the sale price on the first one. Shown with my punch down tool.

Having owned 2 of these tanks for a couple years now I've started to realize a couple things. 1) The orange "airlock" is terrible. Switch it to one of the white marble airlocks before it costs you a batch of wine. 2) The shape of the lid is wrong. The lid has a curve so that the airlock hole in the middle is the lowest point in the wine. This means that it will leak ALL THE TIME out the airlock if it's sitting on the wine. If there's any kind of CO2 coming out (fermenting, MLF, or just degassing) the CO2 will build up under the lid and not vent since the gas is sitting around the edge of the lid instead of coming out the hole in the center. This means it will pressurize the wine in the tank and push it right out the airlock. I tried adding an airlock riser to it and it does not matter it will overflow. Even without CO2 coming out it will leak out the airlock due to volume changes with temperature fluctuations. Every other VC tank lid I've ever seen is flat. I won't be buying any more Speidel tanks until they change the design.
