Description

Ferment ciders, applejack, or apple brandy washes with Safcider from Fermentis. This yeast is selected from strains of the Champagne region of France. Safcider performs well under harsh conditions with a high alcohol tolerance. It can ferment in a temperature range of 50-86°F, but has an ideal temperature range of 64-75°F.
 
  • Works at low pH from 3.3
  • Low nitrogen requirements: from 150ppm of Yeast Available Nitrogen
  • Maximum SO2 level : 70mg/L
 
This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.
 
Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
 
Recommended temperature range: 64F-75F.

Because I'm experimenting with making cider. I typically use Red Star Montrachet for cider, but this seems to be a bit more wide ranging.

Worked like a champ for my first cider batch
My first batch of cider was just made using this Safcider yeast that I bought from the local Riverside More Beer store. All I did was buy 5 gallons of Stater Bros apple juice and added 1.5 lbs of standard sugar. The OG was 1.064. after 9 days in the fermenter at ~72F the Final gravity reading was 1.000. I'm used to fermenting beer so I wasn't expecting a FG this low. There was absolutely no sweetness since all the sugars were fermented to create a 8.3% ABV cider. After one day of cold crashing I backsweetened with about 1-1/2 12oz cans of frozen apple juice concentrate that I dropped into the keg and then force carbonated. The end result was a nice, dry cider with just a hint of that "musty" cider aroma. I've read that with longer aging before packaging that musty aroma subsides. Not that I'm saying it's unpleasant, just noticeable. But regardless, for 20 minutes of my time and less than $30 I made 5 gallons of great tasting cider in just 10 days. After a few days in the keg I also note that the cider is rather "clear" with just a bit of haze.
