Our #1 Best-Selling Yeast! Famous for clean flavors, balance, and the ability to be used in almost any style Ale. It ferments dry and has a very nice, soft malt flavor. We would say that it puts the flavor emphasis on the malt and hops. Definitely one of our top favorites, and MoreBeer!'s best selling yeast! To ferment this yeast properly pitch at 62-65F and let it rise to 66-68F. Ferment for 10-14 days in the primary. This strain can be used in all ales because of its clean crisp character it produces. Cal ale can also be used to help finish a beer's stuck fermentation.

Attenuation: 73-80%
Flocculation: Medium.
Optimum Fermentation Temp: 68-72.
Wyeast Equivalent: 1056 American

Great yeast for NEIPA
Put together an all grain NE IPA. I used Pale 2Row, oats, and wheat with citra/mosaic/el dorado. This yeast least left the beer hazy and tasting perfect.

I made a 1L starter approximately 24 hours before hand with some dried malt extract.

Yeast was chugging along approximately 4 hours after pitching.

I recommend this product. I have previously used dry yeast, the fermentation starts much faster with this product.

great for Pliny the Elder
my second brew of this beer with this yeast is currently in progress. going great at 67F after 3 days. first time I used this strain PtE came out fantastic! grew up an 800ml starter for about 18 hours. added about 20 sec. of pure oxygen after pitching. and away she went!

Very irresponsibly the ice pack is an option that you need to remember to BUY
I am rating this one star not because of the yeast because I am sure that it is great but because of the fact that a company selling it in CA has the ice pack as an option which is completely irresponsible. Even if it is shipping in state it will NEED an ice pack. I am in Phoenix Arizona and it is July with temps hitting over 110?f and who knows how hot on a fed ex truck. I tried to make a starter on my stir plate and it didn't look like it was doing much but I pitched it anyways. 3 days later and nothing so I went to my local homebrew store and got 2 packs of dry us-05 and a few hours later it was rocking. Hopefully my brew doesn't taste bad with the 3 days of nothingness.
I will from now on only buy my yeast locally.

I have never seen a yeast ferment as strongly as this. Super strong fermentation- better have a blow-off tube. Ferments clean, no off-flavors.
