Description

Originating in the Burgundy region of France, in such famous appellations as Montrachet, Meursault, Poilly-Fuisse and Chablis, Chardonnay is now the most popular white wine style in the world. Chardonnay thrives in a wide range of soils and weather climates from France to Australia.  Winemakers love Chardonnay because it produces such a wide range of complex, flavorful wines. From fruit forward and crisp, to lean and minerally, to hedonistic, rich, and oaky, no wine sparks as much stylistic debate as Chardonnay. 

California Chardonnay offers a full spectrum of expressions, as the grape is widely grown throughout the state from the warmer climate of the Central Valley to the cool, foggy hills near the Pacific coast. Traditionally, California Chardonnay is assumed to be full-bodied with a buttery texture and prominent oak character. But more modern approaches produce examples that have little to no oak character at all and can range from bright and fruity to soft and earthy.

Our California Chardonnay has highly expressive tree fruit flavors of green apple, pear and apricot with no oak character. With an alcohol level of 12.5% this Chardonnay features a dry finish and medium body.

Lovely wine
I'll be honest, I was hesitant to get a Chard from the original series rather than the estate series as I'm really picky with Chardonnays. I'm so impressed with this Chardonnay! I used the EC1118 included alongside CY3079 and some med oak cubes. It blew me away and is a huge hit with my family and friends. I'll be making this one regularly. If I could give it more than 5 stars I would!!

Decent wine, stellar when carbonated!
Makes a decent Chardonnay on its own, nothing spectacular. Where it does shine though is with bubbles added. Absolutely delightful as a "champagne style" sparkling Chardonnay.

This is the 6th batch I've made over 2 years and my entire neighborhood loves it at parties.

It comes with EC1118, but I usually purchase D47 or Rhone 4600 for a little more flavor profile. Save the EC1118 in case it stalls or for other projects. It also helps to ferment with a 1/4 tsp soft blanc tannins.
I keg up the cleared wine and max out the CO2 regulator to 60psi to carbonate for a few days, shaking the keg frequently. Pouring is always foamy at this pressure, even with flow control, but it subsides quickly.
