I have heard that lead can be removed from brass fittings with a simple process, is this true?

Yes, and it is very simple to do! The recipe is: 2 parts White vinegar 1 part Hydrogen peroxide. When the water turns blue after you have soaked the parts for 15 minutes. Remove them and rinse well. This only removes the lead from the surface. As the acidity of the wort dissolves the surface it will expose fresh lead and you will need to repeat this procedure occasionally.
