Description

Cubes have a longer contact time than traditional chips do, which make them better for long-term aging of wines and beers. Also, longer contact time means longer extraction of flavors (3-6 months), which leads to a more complex combination of flavors. Chips are usually done giving flavor after a week, there by contributing a harsh, flat oak flavor.

Our cubes are fires toasted and cut by Stavin, a leading supplier of high-quality oak alternatives to top commercial wineries.

I use Hungarian barrels. When the barrel's flavors become neutral, I use the cubes to make the barrels last longer.

Cubes work great
There's nothing wrong with using cubes to give it that oakiness you desire in a much shorter time than using barrels. Hungarian oak is somewhat medium or moderate in imparting oakiness...so it's great for something you don't want a strong oakiness in (like a Merlot).
