I am thinking of adding this to the Morebeer American Wheat extract kit to make a summertime brew akin to Sam Adams Cherry Wheat. How much would be suggested to give a similar (mayyybe slightly more cherry forward) flavor? The label says 1-4 oz for a 5 gallon batch, which is anywhere from 1/4 to the whole bottle ¯\_(ツ)_/¯
Chris Meier on Mar 20, 2022
BEST ANSWER: I have always used 4oz per 5 gal batch. If you are planning to add this i would skip the 5min cascade add. First time i added flavor to my wheat beer i did not skip the 5 min hop addition. It was a strange flavor, slight cherry with grapefruit.

Thank you for your review. Sorry to hear that you were not happy with the flavor profile of this extract.
It is very difficult to find the perfect balance of flavor additions with extracts like this that use natural flavors in alcohol or glycerin.

The most important thing is to make sure you don't use too much and that it is mixed in perfectly. We find the best way is to start with a sample and a very small amount of extract and make sure it is very thoroughly mixed in, then taste the beverage and add more if you need to.

Other tips we can offer involve selecting the correct flavor and building your beverage's flavor profile to support that flavoring. It takes a fair amount of residual sugar and the correct acidity to make something taste like a real fruit. You may need to adjust your sugars and acids to taste.

Hope this helps!

Added this to a porter because I failed to get decent cherry flavoring in it using real cherries. It basically works. Aroma is strong cherry. Taste is cherry-like but a bit artificial. Beer is drinkable but not as good as I had hoped. Of course, that's my fault for failing with the real thing.

Reminds me of cherry soda
Not terrible, but not great either. Used this for a Chocolate Cherry Brown Ale, and the flavor was a bit too artificial for me. Next time, I will probably go with a puree or fresh. I use 5 lbs of frozen blueberries in a blueberry wheat ale I make, and that is always delicious.

Medicine Taste
Used this to flavor a Milk Stout, from the reviews I assumed it wouldn't overpower a dark stout. I was wrong, it left an overpowering artificial medicine taste, rendering an otherwise
smooth creamy oatmeal Milk stout undrinkable.
Beware!

Hard Seltzer
Used 2 oz just before kegging 5 gallons of hard seltzer and it came out awesome! Will be buying more in the future.

Reliable
These fruit flavorings are nice to have available and are reliable. I use when either real fruit isn't available or I don't want real fruit to kick of additional fermentation.

Anyone having any of my brews, I add the fruit flavoring at either kegging or bottling, has raved about the beer.

IMO, Sam Adams Cherry Wheat takes a back seat to my Cherry Wheat.

Worked Great For Me In My Cherry Gose
Used tart cherry juice in my Gose and didn’t have enough to give the cherry flavor I was looking for. Added half a bottle of this to the keg and it ended up right where I wanted. Cheers.

Use on darker beers.
I purchased 2 of these for 2 different 5 gallon beers.

If you are doing a lighter beer and hoping for a tart cherry flavor, I'd advice against this product. It leaves a strong taste like medicine. I'd say that the purees work better for lighter beers.
However, if worked well on a stout. It left a faint cherry taste without the tasting like medicine.

Great addition to a Hefeweizen
Added 4oz of this Cherry extract to MoreBeer's Hefeweizen extract kit. Added it to the bottling bucket as I racked from my primary. It turned out great. Gave a nice tart cherry finish to the end. Very natural tasting.
