Description

  • LalBrew BRY-97™ is an American West Coast-style ale yeast loved for its ability to produce clean fermentations for high quality ales
  • A neutral and highly attenuating strain with a high flocculation ability that can be used to make a wide variety of American-style beers
  • Through expression of a β-glucosidase enzyme, LalBrew BRY-97™ can promote hop biotransformation and accentuate hop flavor and aroma
  • Lallemand premium brewing yeast offers brewers unmatched consistency, reliability and purity from one batch of beer to the next

"West Coast Ale" yeast is known for its clean, neutral flavor profile and strong attenuation. With no overwhelming characteristics, this yeast lets your grain and hop choices shine!

BRY-97 gives you a quick start and vigorous fermentation, which can be completed in 4 days if kept above 63° F. The aroma is slightly estery, almost neutral and doesn’t display off-odors when handled properly. Because of its high flocculation, it may slightly reduce hop bitterness levels. Best results when used at traditional ale temperatures (62 - 72° F) and after rehydration in the recommended manner (see the documents tab for re-hydration procedure).

Beer Styles: American ales
Aroma: Neutral with slight ester
Attenuation: Medium to High
Fermentation Range: 59-72°F
Flocculation: High
Alcohol Tolerance: 13% ABV

Best clean ale yeast to sub in for a lager for my buddy who doesn't have fermentation temp control and doesn't notice the 2 day lag time on this yeast when he uses it.

I chose this since it seemed like a good ale yeast choice for a Pliny and the Cali Ale yeast would have delayed the order.

Flocculates better than US-05
I've gone back and forth between this and US-05. After a few years - I just like this BRY-97 more. Why?
1. It's active and aggressive. The fermentation starts within 24 hours and is usually finished after 4 days.
2. Once it's done - it gets out of the way for nice clear beer.
3. It recycles well. Using a cup of the previous batch trub after bottling - I can get these to last 6 months. Even then - it's just to keep the strain relatively pure. (if you brew consistently)

Update Post Bottling
I bottled the beer made with LalBrew BRY-97. It turned out pretty good. I was worried the blown airlock would allow the beer to become skunky. To my relief it is good. I like the light floral taste and the beer is not cloudy. I hope the bottle conditioning will further reduce some of the haze.
This being the first time I have used this particular yeast, I am pleased with the results.

Very vigorous once it starts
I have not tasted the beer, but I am sure it will be tasty. Once the yeast started doing their thing it was a very vigorous ferment; it blew the airlock off the carboy.! This was the first time I used this particular yeast. It was the first time in ten years of brewing that fermentation did not start within 24 hours. I pitched while the wort was at 62F. The wort stayed at 62 and the yeast did not start fermenting. I raised the temperature of the wort to 65F and the yeast woke up and started fermenting. Anyway, I am looking forward to tasting the beer. It is just a simple pale ale, so I will be able to judge the performance and taste of this yeast.

Wow
My first time using this yeast was a couple weeks ago on one of the single hop experiment all-grain kits. I pitched 2 packs (after rehydrating) into 6 gallons of wort at 65 degrees. Fermentation was at 63 degrees. I actually blew past my expected FG in five days. It was by far the most rigorous fermentation I've experienced. It nearly cleared a blow-off cup in 48 hrs. It nearly emptied an airlock by day three, then activity dropped fast.

It produced a fairly clean tasting pale ale with zero off flavors. It's supposed to flocculate well, so far I haven't seen that. But I'll definitely be using it again, this time on a super hoppy IPA.

Took off quickly on high SPG brew
Used for MoreBeer! Over The Top Double IPA.SPG 1.080. Took off in 6 hours. Down to 1.010 in 6 days and into secondary fermenter. Tasted the SPG sample and it was great. Dry hopped in the secondary and looking forward to a tasty brew in a couple weeks.
