Nottingham Dry Yeast is the prefered yeast for English Style Beers, but it is an extremely high performing and versatile strain, allowing it to be used in beers across the spectrum. Even though it's a great choice for traditional styles such as Pale Ales, Ambers, Stouts and Porters, it is far from limited to these classics. Nottingham will also perform well in Golden Ale, Kölsch, Lager-style beers, IPAs, Barleywines and others.  It is appreciated for it’s ability to quickly produce a vigorous fermentation, and forms a compact yeast cake at the bottom resulting in a lovely clear beer.

Strong fermenting and reliable
There is a reason this yeast has been around for so long. If you are looking for an ale yeast to "always have around" this is it. Nottingham is versatile and reliable. It's mostly clean below 64F and pleasantly expressive above 65F. It ferments fast and drops clear quickly. What's not to like?

Beast of a yeast
Very reliable, but more reliable then expected. My brewing software, Brewfather, had this entered at 75% attenuation. Noooope. Expect over 80% attenuation, perhaps even 85% attenuation. My target FG 1.011 Irish Red Ale ended up at 1.005. My software and brew performance on my equipment is very tuned and consistent, so the yeast is definitely the outlier (the high attenuation level has been confirmed on several homebrew forums).

Be sure to check your software's expected attenuation for this yeast and adjust your temps or non-fermentables accordingly.

Best English IPA yeast
As I wrote on my New England dry yeast review, I am not normally a user of dry yeast. These yeasts by Lallemand are changing my mind. This is now my absolute first choice for an English IPA. It has a huge temperature range. It knows how to finish. Unlike the New England IPA yeast, it isn't as all hop flavor. It has some malt/hop combo flavor. It is just perfect for a Maris Otter malt ESB - IPA. The beer is clear w/o filtering. This is just a fantastic yeast for anyone who likes a beer with a hop AND malt character.

Nottingham yeast will attenuate a brew to just short of dry. Good all around product and the fermentations are nothing less than spectacular.
