Bubbling Crude, Black Gold, Texas Tea - you may not strike oil in your backyard, but you can make Imperial Stout at home. With a texture and color similar to black crude oil, this monstrous, thick, chewy beer takes a minimum of six months to age out. The foundation of the beer is 12 lbs of malt extract. Then we throw in some Crystal, Chocolate, Roasted Barley, and Black Patent malts. Yes, there are two additions of hops in this recipe but you probably will never taste them through all that malt flavor. This is a great beer for sipping in front of the fire. Will age for years, eventually gaining some Port-like flavors.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

what dry yeast would be best for this recipe?

BEST ANSWER: I have made this recipe four times, and I used Windsor dry yeast each time. It is a great recipe! In fact, this recipe was the Grand Champion beer at the Spokane Interstate Fair in 2015.
I have brewed this twice and struggled to get over 6.5% ABV. My OG comes out showing I should hit 8%, but never do. Any suggestions? I do a 60 minute boil along with one packet of yeast, whatever is recommended.

BEST ANSWER: Sorry for response delay. I started with an OG of 1.086. I added 3 drops (literally) of olive oil to the boil for the last 5 mnutes. I read that helps the yeast with oxygenation. I also bubbled 30 seconds of oxygen through a sintered stone into the cooled wort for this purpose. I also made a yeast starter. I went with Safale S-04 dry yeast and put it into undiluted Propper starter for 24 hours at room temp, swirling occasionally. It was very active when pitched and had only 6 hours of lag time to first sign of fermentation bubbling. Final gravity 1.028 for an ABV of 7.6%. I guess I have the same disappointment as you, though it tastes great! I welcome other thoughts.

I love Imperial Stouts...but 8% seems way low. Is there anything to boost this kit to 9-10% abv?

Best stout off the shelf.
best stout kit I have brewed. The first time I brewed this kit I was HOOKED! I've brewed this many times for Christmas time as a base recipe and build on it. Cocoa nibs, vanilla bean, cinnamon, dry hopped. DME instead of LME, YUM! The last one topped at 14% and was off the HOOK!

An explosion of sorts...
We added to the recipe for the stout with an extra 5 pounds of malt extract in the hopes of elevating the ABV to greater than 8%. Our estimation is it should be somewhere north of 15% when completed. When we initially put this stout into the primary fermentation tank it did not appear to be active. That was until the following morning when we opened the controlled cooling unit. It had blown out the water lock bubbler and covered the inside of the unit with dark rich foam. You can see in the third picture the black form completely filled fermentation tank. On a lighter note, the cooling unit smelled incredible LOL. We retrofit the bubbler to a 3/8 inch tygon hose and placed it in a bucket of sterilized solution. Fermenting at 66°, day nine still extreme fermentation. We will age this in the Bourbon barrel somewhere between two and six months. We will keep you updated.
We added an extra 5 pounds of malt to this stout to achieve a greater than 8% ABV, est 15%+
Fit a 3/8 tygon tube to the bubbler and placed it in sterilizer solution.  And cleaned up the mess
Stout did not begin to ferment until the next morning, it had expanded and blown out the bubble
A burnt bourbon barrel will age our super stout.

We’ll see!
So far so good! 2 weeks in, I expect after transfer it should be better in 2-3 months. I woul give it 6-9 months but nothing lasts that long.

Amazing Beer
I have brewed this twice. The beer is very dark, smooth, and rich in flavor. I keep the CO2 around 12 PSI in the kegerator. I used the WLP007 Dry English Ale - White Labs Yeast both times.

Too thin for an imperial stout
This stout comes out really thin. Not impressed at all. Brewed 15 gallons to put in a bourbon barrel to age and wished I had known it was going to turn out like this. Buy some dark lme to boost it up a bit.

Surprisingly good
My last Imperial Stout was a homemade all-grain recipe. I got lazy on the next one and went with this extract kit. With an otherwise high grain bill, extract is much easier in my setup. I added cocoa nibs, chili pepper, oak and bourbon, so can't comment on the taste of the kit by itself. But it made a great base and tasters say the result is better than my all grain batch which had the same additives.

It's good, but...
I've made this one twice, once with S-04, and once with US-05 yeast. Much better with of 05. My only complaint is, it's not dark enough!
