Traditional Czech Saaz hops are most commonly chosen for aromatic additions to Pilsners and Lagers, but also work well in Light Ales and Belgians. Though alpha acids are low, they are used for both bittering and an aroma of pleasant earthy, herbal and floral notes. You can finish just about any Lager recipe with this versatile hop. A very unique Belgian Ale. This recipe has moderate bitterness from early kettle additions of Saaz hops. This beer is spiced with Bitter Orange Peel and Coriander which lends a surprisingly pleasant flavor and aroma. The grain bill includes Oats and Flaked Barley which when combined with a very special non-flocculating yeast leaves a cloudy, almost white appearance. Hence the name wit which means white. This is a very refreshing style that has a light, crisp flavor. There are some phenolic flavors as well, like you would find in some Belgian Abbey Ales and even German Hefeweizen. Hoegarden or Celis White would be some commercial examples that represent this style.

Liquid Gold! So smooth for a beer with an alcohol by weight of 7%! It leaves lots of classic phenolic flavor, but produces a very soft body without a high alcohol bite. Not that bitter, this golden beer is about a strong and complex malt body. It may take a goblet or two to grow on you, but once you acquire the taste.... some would say "beervana." Belgian ales are really about creating a simple yet elegant malt base upon which the unique Belgian yeast strains can create their wonderful, complex flavors. This Belgian Ale is their equivalent of our pale ale in alcoholic strength and body. The difference is that the hops are very subdued and only complimentary where as in many American beers hops can create a majority of the flavor profile. One is not better than the other just different, and we love diversity in beer.
Terms used to describe Belgian Ales include phenolic, fruity, with the occasional clove, plum, and banana flavors coming through. Sometimes you just have to try one to understand. In the Dubble and Triple you will have some higher alcohol flavors coming through. This version is less alcoholic and highly drinkable.
Any of the four Belgian yeast strains that we carry from Whitelabs could be used in any of the Belgian recipes. They are all excellent in their own right. The malt extract for this kit is made entirely from our German Pilsner Malt, giving it authentic European flavor. We use turbinado sugar to help up the alcohol and dry out the beer during fermentation.

A German Lager/Ale hybrid style that is traditionally made in Köln, Germany. Ideally, this beer is fermented between 58 - 64F, followed by cold aging for several weeks. It is a very tasty summer brew! Blonde in color, with low hop bitterness, a smooth flavor; grab a few bottles and head for the pool! This kit includes 4 pounds of our Pilsner liquid malt extract for authentic pils type flavor and 2 pounds of golden DME to give a more complex malt flavor to this light beer style. This light ale recipe is the most basic gluten free kit we offer. An ideal first low gluten brew so you can get an idea of what malt flavors sorghum contributes to beer. This recipe is light and easy drinking.
Gluten-Free beers are a different world when it comes to finding a suitable replacement for the base extract. Celiacs are allergic to the hordein protein found in the base malts such as 2-Row and Pilsner malt. They are also allergic to the gliadin protein found in wheat which is the biggest offender of the two proteins. As a homebrewer your goal is to find a suitable fermentable that can emulate the maltiness in beer.
Our Gluten Free recipes use Sorghum extract for the base fermentables. Hops aggressively cut through the maltiness from sorghum easily. Hop additions in gluten free beers tend to be 40-50% less than normal.
All our gluten-free kits include dry yeast due to the small traces of the gliadin protein found in liquid yeast. (Although lab research has found the yeast metabolize the gliadin protein after fermentation and significantly reduce the ppm present.)

Erik Beer was the president of the local homebrew club, DOZE, for a number of years. During that time, he created and perfected recipes for a number of different brews, this easy-drinking Cream Ale being one of them. We have been a fan of John Palmer ever since his book, "How to Brew" hit our shelves way back when. After meeting him at a few gatherings here and there, and after recommending his book hands down over any other, we decided to try and add John to our Signature Series line-up. When he agreed, we knew we would get something special from him, and he did not disappoint. John describes his kit as: "a smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops. This interpretation of the Vienna style has more hop flavor dancing around the edges than the current BJCP guidelines specify, but the hop profile really complements the rich malt palate for a lively complexity that you don't get from the hoppier Bohemian Pilsener or maltier Oktoberfest styles, and is richer and smoother than Dortmunder Export." This beer will not dissapoint! Thanks, John, for the kit, the book, and the advice! John recommends White Labs WLP833 for a dried beer, and WLP820 for a maltier version.

Liquid Gold! So smooth for a beer with an alcohol by weight of 7%! This recipe includes quality sugar, plus an immense amount of both dried and liquid Light Malt Extract, hops and uses the Trappist yeast strain. It leaves lots of classic phenolic flavor, but produces a very soft body without a high alcohol bite. Not that bitter, this golden beer is about a strong and complex malt body. It may take a goblet or two to grow on you, but once you acquire the taste.... some would say "beervana." The malt extract for this kit is made entirely from German Pilsner Malt, giving it that classic European flavor.

Charlie Essers (AKA Push Eject) has been a longtime friend of MoreBeer, The Brewing Network, and homebrewers in general. Dubbed "one of the nicest guys in homebrewing" by those who know him, Push wanted us to have this recipe that he brews whenever his father-in-law comes for a visit. Push says: "My family has been supportive of all the brewing gadgets and scattered projects including my "dark-beer-phobic" father-in-law. This recipe is an Americanized pilsner that I have evolved for him over the years. Sweeter than a standard pilsner, but still crisp and refreshing, I can't keep this around long in the Summer months." Push began brewing in 1999 after buying a starter homebrew kit as a bad joke for a friend who earned a DUI and getting one for himself as well on impulse at the register. After going all grain in 2002, it was clear that automation was a necessity in his process, and his love of brewing gadgets was born. His first stand was designed and built in 2003 and his first Wort-O-Matic control panel in 2006. In 2020, Lager at World's End earned them a Gold Medal in the American Lager category at the Great American Beer Fest (GABF) beer competition. That award-winning recipe featured our own Viking Pilsner Malt.
