What is a Cold IPA?

A newcomer to the already large and ever expanding IPA world is the Cold IPA. At first glance of the new style you would think it's simply a rebranded IPL. Upon digging a little deeper, the credited creators of the style Wayfinder Beer & Great Notion Brewing did pull out a few tricks to set it aside from the already established India Pale Lager. Yes, Lager yeast is used for fermentation, but they claim to do primary fermentation a little higher to help drive some yeast esters. Also the use of adjuncts like Rice and Corn are included in the mash to lighten the body and dry out the finished beer. Of course copious amounts of hops during whirlpool and dry hop bring this new beer style into the IPA world. I think we all can agree light, dry and hoppy beers are amazing, so we welcome this new beer style. Will it go the way of the Brut IPA or be here to stay like the Hazy IPA? Only time will tell, but cheers to beer style innovation!
