Description

Leaves 2-3% residual sugar in most meads. Rich, fruity profile complements fruit mead fermentations. Use of Wyeast Wine Nutrient Blend is recommended.

How much Wyeast to use per gallon?

BEST ANSWER: Usually one package of wyeast is good for up to 5 gallons of brew at 8% alcohol or less. If you're making a stronger batch than that you will benefit from using 2 packages or growing your yeast prior to brew day by using a yeast starter. This applies to mead, beer, and cider.

BEST ANSWER: I always use the SNA (Staggered Nutrient Addition) schedule. So no yeast nutrients at pitching. Create a mixture of 1 tsp. Fermaid-K & 2 tsp. DAP. Then for a 3-gal batch
Day1: Add3/8 tsp. when making the must
3/8 tsp. 24 hours after fermentation begins
3/8 tsp. 48 hours after fermentation begins
3/8 tsp. when 30% of the sugar has been fermented (~1 week)

Save your money.
I bought this yeast with plans for a sweet mead… followed directions on packaging making a simple honey mead and after 2 days no fermentation.
I degassed and made sure to add nutrients, but no fermentation.
I added a packet of a different brand that was dry and fermenting began in an hour.
Many reviews on other websites are either awesome or horrible.
Pricey yeast that's "hit or miss" at best.

No Fermentation
Unfortunately I can’t leave much a review. My yeast can in at room temperature. I followed the instructions and pitched the yeast into my mead and used TOSNA for nutrients. After 5 days fermentation never started. I pitched another yeast I use quite often and it started fermenting within the hour. I’m not sure what happened, but this product didn’t work my first time.

Sweet Mead for Blackberry Wine
Found an awesome recipe for Blackberry wine that called for sweet mead. I was not aware that it should have had an ice pack and should have been refrigerated, as the envelope says. That being said, I followed the recipe, added the mead at room temp, and had fermentation start shortly thereafter and still going strong a week later. Obviously, it was not a problem.

more expensive and more preparation requirements. Not sure what went wrong my mead did not ferment.(main reason for 1 star) this was my 2nd batch of mead. I have been brewing all grain beers for years and this was The first time I had yeast issues.

Sorry to hear about the trouble you had with the fermentation. Mead can be really tricky, especially if you're going for a high gravity. Once important step that may help is shaking or swirling the carboy to degas the fermentation during the first two weeks. The substrate can get really thick and not let out the CO2 which will stunt the yeast. The other important thing to check on is the pH range to make sure you are firmly in the 3-4 range. If you're doing all of these things then there might be some problems with the yeast nutrients. Hope this information helps for your next couple batches. Cheers!
