Description

  • 2112 is particularly well suited for producing California Common-style beers
  • Retains lager characteristics at temperatures up to 65°F and produces malty, brilliantly clear beers.
  • Not recommended for cold temp fermentation
  • Activator Smack-Pack System™ "proofs" the yeast and shortens lag time when it hits your wort
  • When smacked, the Activator™ packet releases sugars and nutrients to initiate the culture's metabolism

  • Although beneficial, cultures do not need to be activated prior to inoculation

The California Common or Steam beer, made famous by Anchor Brewing Company, is the quintessential example of the style behind this strain.  A hybrid lager strain that performs well at ale temperatures and demonstrates a full and provacative flavor profile.  An absolute must for San Francisco style lagers! Don't forget your Northern Brewer hops!

This strain is particularly well suited for producing 19th century-style West Coast beers with woody/minty hop flavor. It retains lager characteristics at temperatures up to 65°F (18°C) and produces malty, brilliantly clear beers. This strain is not recommended for cold temperature fermentation.

Great yeast if you can get it in good condition.
It’s good yeast but it’s very hard to get it delivered in good condition this time of year. Unless you can get it (in an insulated bag with ice packs) over night, it will start to grow and is then really hard to revive in my experience.

Excellent Yeast
I highly recommend this yeast for brewing California Common. It takes off vigorously and gives a nice crisp finish. An Uncommon Common brewed with this yeast at a near steady 68 degF recently took 3rd place at a regional home-brew competition.

Excellent choice
You can brew a real lager with this yeast without the extra pitching rate necessary when you ferment at cooler temps. Makes brewing cleaner beers easier.

Vigorous performer
I used this as an addition to a slow lager fermentation and it seemed to work very well - finished off the ferment and dropped out the previous pitch of (different) yeast to leave a clean clear lager
