Description

  • 3944 is a versatile witbier yeast strain can be used in a variety of Belgian style ales
  • Produces a complex flavor profile dominated by spicy phenolics with low to moderate ester production
  • Activator Smack-Pack System™ "proofs" the yeast and shortens lag time when it hits your wort
  • When smacked, the Activator™ packet releases sugars and nutrients to initiate the culture's metabolism
  • Wyeast has been a pioneer in craft brewing for over 35 years and is committed to creating the finest fermentation products available
  • Although beneficial, cultures do not need to be activated prior to inoculation

This versatile witbier yeast strain can be used in a variety of Belgian style ales. This strain produces a complex flavor profile dominated by spicy phenolics with low to moderate ester production. It is a great strain choice when you want a delicate clove profile not to be overshadowed by esters. It will ferment fairly dry with a slightly tart finish that compliments the use of oats, malted and unmalted wheat. This strain is a true top cropping yeast requiring full fermenter headspace of 33%.

Flocculation: Medium
Alcohol Tolerance: 11-12%
Optimum Fermentation Temp: 62-75°F
Cell Count: 100 Billion

Finished at 1.012 or spot on. MoreBeer insulated the yeast pack well. No off flavors detected and one of my better beers to date (Blue Moon clone).

Belgian Wit
Made a Belgian Witbier. Turned out to be a session at 3.7%, but the flavor from the yeast is spot on. Will be brewing with it again ASAP. Going for a bigger Belgian Wit next time - 5.2%ish

Best Belgian Wit Yeast!
I love this yeast, I brewed a Belgian Wit recently and this yeast really made the difference with the aromatics, slight spice and tang and had that authentic Belgian quality taste and aroma. This is the one to use if you are making an authentic Belgian Wit.

Great for Belgian Wits
I have used this yeast a dozen times to brew a Belgian Wit. It is one of our go-to brews, everyone loves it and this yeast is the main reason why. I have tried other yeasts and (my opinion) this is superior.

long fermentation
Wow! This yeast took a 1056 down to a 1008. It started very quick and went for a full three weeks in the primary. The beer is awesome after bottle conditioning. Probably the best Wit yeast I've used. Just gonna have to give it time.
