Description

This strain produces complex esters balanced with earthy/spicy notes. Slightly tart and dry with a peppery finish. A perfect strain for farmhouse ales and saisons.


Flocculation: Medium
Attenuation: 74-79%
Temperature Range: 70-84°F (21-29°C)
Alcohol Tolerance: 12% ABV

Complex
Used in a Pale Standard Saison. Fermentation character was very pleasant and complex: A bit tart, with esters like lemon, pineapple,banana and orange. Light phenols like black pepper when you and seemed to mature into clove. I think this could easily be used in other Belgian styles as well, next beer I use this in will be a Belgian Pale Ale.
