A classic strain for Belgian Dubbel or Tripel. Produces a balance of complex fruity esters and phenolics, which can be manipulated with fermentation temperature. A true top cropping yeast (additional headspace is recommended), that will work over a broad temperature range. 3787 is a wonderful Belgian-style house strain.

Flocculation: Medium
Attenuation: 74-78%
Temperature Range: 64-78F, 18-25C
Alcohol Tolerance: 11 to 12% ABV or higher

Too short of fermentation
Fermentation for only 1 day. ABV was only 4%.

My Go-to Belgian Yeast
I have used this yeast 10 times at least. It is an excellent product for making Belgian ales. I usually go for the Belgian Strong Ale - formerly know as a Belgian Quadrupel. :-)

Have tried with several Belgian recipes and always get good flavors, but it can produce strong alcohol flavors if not fermented properly

Pretty Good.
I tried this for the first time since I mostly use White Labs yeast. I did a side by side comparison and the White Labs started right away and this yeast took about a day longer. Same conditions.

watch temps
bumped up temps slowly during fermentation, got over 74 and became very alcoholic tasting.

This is a good one!
This yeast was a little slow to kick-off (from a fresh pack) in my starter, but it finally took off. My extract quad finished better than I hoped!

Geat Yeast for Strong Belgian Beers
Has a great "Abbey" profile with nice esters. Perfect for Tripple's! Keep it warm so it doesn't stop working.
