Description

  • 2565 is a classic, true top cropping yeast strain from a traditional brewery in Cologne, Germany
  • Produces beer that will exhibit some of the fruity character of an ale, with a clean lager like profile
  • Activator Smack-Pack System™ "proofs" the yeast and shortens lag time when it hits your wort
  • When smacked, the Activator™ packet releases sugars and nutrients to initiate the culture's metabolism
  • Wyeast has been a pioneer in craft brewing for over 35 years and is committed to creating the finest fermentation products available
  • Although beneficial, cultures do not need to be activated prior to inoculation

This strain is a classic, true top cropping yeast strain from a traditional brewery in Cologne, Germany. Beers will exhibit some of the fruity character of an ale, with a clean lager like profile. It produces low or no detectable levels of diacetyl. This yeast may also be used to produce quick-conditioning pseudo-lager beers and ferments well at cold 55-60°F (13-16°C) range. This powdery strain results in yeast that remain in suspension post fermentation. It requires filtration or additional settling time to produce bright beers.

Best Koslch yeast I've used so far
Used 4 other Kolsch yeasts and this one has been the best so far. Imperial Dieter is a close second. Clean, crisp lager like beer. Ferment low and slow, but still expect a blow off. 62 for 24 hours, then up to 65 to finish. Blow off every time

Less than expected
This yeast supplier seems to have a great reputation. I however have had little success with any of their products. I think shipping with the grains perhaps is to much to ask as most arrive already fully expanded. Slow fermentation and fall sort of complete fermentation for a five gallon brew. Had higher expectations.

Comparing kolsch yeast
I wanted to compare this yeast to G03 Dieter.
The same recipe was used for both beers. However, I did get more flavors from G03. Malty and refreshing with a hint of noble hops. The beer cleared extremely faster. And it fermented faster as well.

Wyeast 2565 would be my second choice if Dieter is not available.

More Beer to the rescue
My homebrew club, the Southern Maine Homebrewers did a collaboration brew with Geary's Brewing Co. Portland and this was the perfect yeast for our 'authentic' Kölsch brew. The packets came on time, at the best price and the yeast was so fresh i easily made a 2 gallon starter for the 45 gallon batch. I recommend More Beer to anyone looking for the best price of home brew supplies.

GREAT YEAST!
If you don't want to or can't ferment at 48 to 52 degrees, this yeast makes a great alternative. I have used it many, many times for pseudo lagers. Primary ferment at 60 to 65 and then lager as normal.

Good Yeast for a Lager like beer using ale yeast
Very active yeast. It blew the cork out of my fermentor in the first 18 ish hours. Brew smelled wonderful when I checked it and found the cork out. Still to taset the brew. That is still a ways away.
