Description

  • 2308 is a unique strain capable of producing fine lagers

  • Activator Smack-Pack System™ "proofs" the yeast and shortens lag time when it hits your wort
  • When smacked, the Activator™ packet releases sugars and nutrients to initiate the culture's metabolism

  • Although beneficial, cultures do not need to be activated prior to inoculation

This is my personal favorite when it comes to German lager strains. It could be my family association with Bamburg and the excellent rauchbier that this creates, or it could be the rich malt complexity that this strain delivers. Excellent for both helles lagers and more rich and malty lagers, such as maibocks, marzens, vienna lagers and doppelbocks. As a beer geek, I swear that you will love this strain if you enjoy a good German lager!

This is a unique strain, capable of producing fine lagers. It is very smooth, well-rounded and full-bodied. A thorough diacetyl rest is recommended after fermentation is complete.

Didn't work for me. Followed instructions. The pouch did swell after activation and I pitched at 55 degrees. No visible fermentation after two days so I added a lager dry yeast I had on hand which worked. Also it has almost doubled in price. Not worth it.

Great active starter within 12 hours and rocketed off in the primary with visible activity within 12-18 hours. High fluffy/thick krausen within two days or so, probably the freshest yeast I’ve had the chance to use so far

Using this yeast for Helles and Dunkels. With a 2L starter I get quick starts (within 12 hours) in my 5 g batches at 52F. Ferments very clean and drops clear quickly.

Finishes round and malty. Finally found a yeast that takes me back to Bavaria!

My favorite all-around lager yeast. Got a reputation for producing diacetyl, but in 5 batches I’ve had no issues. Start low (45-48) and be patient with the lag time. Prouduces really rich, malty German lagers.

Works Great!
I let the bag warm to room temperature, popped the inner bag and let it sit for about 3 hours prior to adding to my Munich helles. Worked like a charm. West takes a lot of the guesswork out of the yeast portion of the brew.

Good Lager Workhorse
I have been using Wyeast Munich 2308 for many years now from lighter helles lagers to heavier bock beers. The malty profile left by the yeast, when used at the right fermentation temperatures and sufficient lagering, makes a clean tasting lager. For me, making lagers has been more difficult than ales, but this yeast worked well were others have failed.
