A very good cask conditioned ale strain, this extremely flocculant yeast produces distinctly malty beers. Attenuation levels are typically less than most other yeast strains which results in a slightly sweeter finish. Ales produced with this strain tend to be fruity, increasingly so with higher fermentation temperatures of 70-74°F (21-23° C). A thorough diacetyl rest is recommended after fermentation is complete. Bright beers are easily achieved within days without any filtration.

Flocculation: Very High
Attenuation: 67-71%
Temperature Range: 64-72F, 18-22C
Alcohol Tolerance: 9% ABV

English Barleywine

Was a winner at the May Day Festival in the neighborhood.

Perfect for its intended use.
If you want to brew an authentic English Bitter, Special Bitter or ESB, there is no better yeast. Highly recommended

Problems with WY1968 yeast.
I always use a yeast starter to increase my yeast count for my 5 gal. fermentation effort. With this yeast (WY1968), the results were not very good. After 48 hours of trying to increase yeast count in the starter, I pitched the yeast into the wort and noticed the yeast had flocculated somewhat. Fermentation lasted only 3 days, in contrast to a more normal period of 7 to 10 days. The apparent attenuation was 60% in contrast to my normal 75%. Not sure of what went wrong, but nothing like this has happened before.

Versitile. A favorite!
I use this for all styles except Belgian. IPA killer yeast. Attenuated as expected(slightly higher FG) but it adds depth. Something I always want around. I've had this yeast stall around 1.020 but then finish after warm up. Floculates like no other!

nervous about the entire batch...
The pouch did not swell up well after smacking even after 24 hours... bad yeast?.. and no noticeable activity on the fermentation... it's been almost a week... I know it is normal for lager brews... not for this kind though... I actually added some London ESB Ale Yeast to see if that will change anything, still no 'bubbling'...

Good yeast
This is probably my favorite ale yeast. I t attenuated well, floculates cleanly and just plain makes good beer.
