Description

Very clean, crisp flavor characteristics with low fruitiness and mild ester production. A very versatile yeast for styles that desire dominant malt and hop character. This strain makes a wonderful “House” strain. Mild citrus notes develop with cooler 60-66°F (15-19ºC) fermentations. Normally requires filtration for bright beers.

Please note that 1056 American Ale has been known to bloat when shipping due to the yeast "off-gassing". Please put this yeast in your refrigerator when received, as the yeast will be fine and should still be viable. Thank you for your review. Unfortunately, we cannot guarantee that liquid yeast will arrive cold because some areas may be warmer than others, the ice packs only stay cold for so long, and transit times range between states. When yeast arrives warm there is no way to know if it is still viable or not unless you use it to see what it does. WY1056 will almost always arrive a little swollen because off gassing is more prone for this strain. If the warm yeast that you received shows no activity in a starter or the fermenter we'd be more than happy to send you a replacement or refund you for the yeast. This yeast is crazy fast and vigorous. Woke up next day to a huge foam ball and vigorous fermentation already going. First time I tried the slap pack. I'll use this next time in my Pliny the Elder.

Used this to make a West Coast IPA. Vigorous fermentation within 12 hours, had to use a blow-off tube! Complete fermentation in 10 days at recommended temperatures, no off flavors. Am currently using again for a Rye IPA.

Great for clean, crisp beer at low 60s fermentation
I use 1056 and 1272 for the majority of American beer styles. 1056 has high attenuation and produces a clean, crisp ale when fermented in the low 60s. I also recommend using 1272, especially if you enjoy a touch more bready backend on the beer. I typically grow starters a week before and cold crash/ decant the day of and let the yeast warm up as I brew. Then oxygenate for 60-90 seconds, never takes more than 6-12 hours to form krausen.

Outstanding product
This yeast worked great for my 25 gallon batch of wheat beer. I also added some orange blossom honey to kick it up a notch. Can't wait to keg it and see how great it will taste.

Great yeast
This yeast rips through fermentation every time I use it. Even though I have only used this yeast a few times, I have been impressed whenever I do. The packet was slightly swollen when I received it but that happens quite a bit with this yeast. It did not affect the yeast however since fermentation started quickly and finished quickly as well. Even the starter I made blew out the top of the flask.

arrived partially inflated
It arrived partially inflated even though it was packed with 3 ice packs and other yeast that was not inflated. Almost to inflated to break the inner liner.Makes me wonder if it was already partially inflated before shipment, maybe poor care was taken before shipment...I really don't know
