Description

This is a great yeast that ferments neutral Mexican lagers with ease.  Brew a refreshing Mexican lager to beat the summer heat!

From Mexico City, this yeast produces clean lager beer, with a crisp finish. Good for Mexican style light lagers, as well as dark lagers.

Attenuation: 70-78%
Flocculation: Medium
Optimum Fermentation Temperature: 50-55°F
Alcohol Tolerance: Medium


For best results we always recommend ordering an ice pack with your liquid yeast.
 

Please Note: When choosing an ice pack option beware that the liquid yeast will not arrive cold even when shipped together. Ice packs and insulated mailing options are designed to keep the yeast colder for longer during shipment, but they will not ensure that your yeast arrives cold. We will not replace liquid yeast that arrives warm. During warmer months we strongly recommend you choose dry yeast.

New House Yeast
Tried on a whim and now it's my go-to for New World-style lagers. Great for any sort of lager where drinkability is your main goal and makes tons of perfect summertime beers. So far I've used it for both a Modelo-style Mexican Lager as well as a Pre-Prohibition style Pilsner.

I haven't gotten much of the typical German-style lager character off of the yeast, but if you're looking to make great lawnmower beers, this is the perfect yeast. Works quick, drops out clean, clear and crisp. Works fantastic under pressure, and others have shown pretty good results at room temperature.

Very surprised!!
First time using this yeast,
1.044OG Mexican Cerveza,
and I'm very surprised to see it finish @ 1.005,
That's 89% attenuation.
This my just be my new lager house strain.

This is a great yeast, not only for Mexican lagers. I use it for many style lagers. It ferments clean, crisp and clears nice and bright in a short time. I like how you can really drop the temp and it still works. I fermented a pilsner at 46 degrees for 3 weeks. Absolutely no esters or off-flavors. This is my go to yeast for Schwartzbier also, allows for depth of color and is still light and dry, think dark pilsner.

Fantastic Results
Used 1 pack of this yeast with a 3L starter and pitched to a 1.055 OG Oktoberfest @ 50F after aerating 1 hour w/ an aquarium pump. Slow to start and stalled at 1.025 but after rousing yeast, and raising fermentation temp to about 65F it continued to ferment down to 1.014 for about 75% apparent attenuation. I was worried this beer would not turn out well but in fact it is literally the best beer I have ever made. Super clean, crisp and clear with a slightly dry finish. Seems to accentuate malt. Definitely try this yeast!

Really nice!
I've brewed 2 Vienna and Oktoberfest lagers with this yeast and had fantastic results. It really accentuates the malty flavors and has a clean crisp finish. Overall very high ratings on this yeast!

I saw this yeast touted by Chris White. I used it in an IPL that came out great.
