Description

Used in the production of traditional German Wheat beers. It produces the banana and clove nose traditionally associated with German Wheat beers and leaves the desired cloudy look. If you desire less banana and spice flavors ferment this yeast at 62F for 10-14 days. This yeast strain is highly flocculent so you will still need a blow off tube as your airlock. Due to the high amount of proteins in wheat, krausen will rise to tremendous levels in your fermenter. The hotter you ferment this beer the crazier your ferment will be.

Fermentation Temp: 68-72
WYeast Equivalent: 3068 Weihenstephan

Amazing how the Banana and Clove come through!
I just bottled last week a Hefe I made with this yeast and I was shocked while bottling how much I could smell the Banana and Clove. Popped one after a week and still had the same great aroma and taste! I can't wait to try this one again!

Makes a great Dunkelweisen
I used this for a simple Dark wheat beer, fermented at the low end and got the best clove flavor

great Hefeweizen yeast
anytime im making a extract or all grain Hefeweizen this is the yeast I will use. This is the best tasting Hefeweizen yeast I have used so far and I enjoy it very much. Show me a better yeast for style, I bet you cant.

Great Weizen
Wonderful yeast for a true German style Weizen. Fermenting at 66F seems to give the best balance between Clove and Banana. Ferment colder for more clove, and warmer for more banana.

Good clean yeast
this is a great, very clean, yeast fermented at 67-68, love it. My go to yeast for German Hefe

Excellent but Fragile Strain
When used fresh, this makes an excellent HefeWeizen, on par with most German commercial varieties. However, this is one finicky and fragile strain. Since I work with yeasts in my day job, I propagate most of my brewing strains. This is the only strain that I have worked with that loses a lot of its characterstics when passaged over time. Most of the banana goes away after several passages, so be sure to use it fresh. Were it not the fragile nature of this strain, I would give it 5 stars.

A fun yeast
Great for Hefe, of course. Depending on what profile you want you can control that via the temperature. Can give banana to clove, but is not overpowering.

Excellent yeast!
This is a go to favorite for me. Every time I brew with this yeast, people absolutely love the beer! Great fruity flavor is imparted when fermented at 70+ and spicey clove when fermented at 65F. Also keeps for a long time so save your yeast and use it again and again!

As advertised
White Labs can do no wrong, in my book. Their yeasts are always fast starting and perform to expectations. I used this yeast for my very first Heff and have little interest in trying another.

Great for a true heff. I like to ferment on the lower side to get more of the clove and less of the bannana flavor
