Description

Used in the production of traditional German Wheat beers. It produces the banana and clove nose traditionally associated with German Wheat beers and leaves the desired cloudy look. If you desire less banana and spice flavors ferment this yeast at 62F for 10-14 days. This yeast strain is highly flocculent so you will still need a blow off tube as your airlock. Due to the high amount of proteins in wheat, krausen will rise to tremendous levels in your fermenter. The hotter you ferment this beer the crazier your ferment will be.


Attenuation: 72-76%
Flocculation: Low
Fermentation Temp: 68-72
WYeast Equivalent: 3068 Weihenstephan

I read this yeasts' profile on White Labs website and this yeast is said to really out the banana and clove notes that are present in the hefe.

Yeast came ready to work

This is the Banana-style Hefeweizen yeast
Hefeweizen is my overall favorite style. Good old WLP300 has never failed me through at least a dozen wheat beers. It produces the more banana-y esters, like a Paulaner, rather than the clovey esters like a Schneiderweiss (for which you'll want Bavarian IV yeast). I find that the ester character tends light (like a Hacker-Pschorr) when you ferment cooler in the mid-60s Fahrenheit, and more funky and yeasty at 70 or more. Single pack has always been enough for my weizens. No surprises.

Didn't work
This is my first time using White Labs yeast. Followed the instructions ... and the yeast was well within its expiration date - yet it didn't rise let create a reaction. I have a number of other White Lab yeasts in my refrigeration - hope they work better. Also was grateful to have some Safbrew on hand in case this situations occurs. I pitched and things started moving immediately.

Great Hefe Yeast
Always produces a great Hefe flavor with very robust clove and banana flavor along with very good attenuation.

The finished beer has a nice haze to it and tastes awesome. Like I said, robust! We normally have around twelve brews on tap here and the Hefeweizen is one of the most popular.

Keeps on delivering
I've brewed 4 hefe's with this yeast and have yet to miss a point. I admittedly spend less effort and time on my yeast prep as some brewers, but this yeast doesn't seem to mind at all. I ferment in a plastic conical in my basement, no special temp controls, and I've hit my numbers on each batch. The results are consistent and I end up with a beer that isn't just great to me but is highly complimented by my friends and brewing peers.

Very active
First time using White Labs yeast. I took it out of the fridge about 3 hours before pitching. Pitched and fermented at 70deg for my hefeweizen. I had to remove the airlock and switch to a blow-off tube, this was a very active fermentation. I did not use any additional yeast nutrients, just pitched from the package.

Keep it as 65F and you make great Hefe's with a basic 50 PIlsner /50 Wheat recipe.

Seems like it works to me.
This is my first time using a liquid yeast so I'm still learning some stuff. Pitching it was a little different from dry yeast, but comparing the two I liked the start off of the liquid better than the dry because it was a bit more aggressive during the beginning. Yet as the process started to mellow after 2.5-3 days it seemed to me that it stopped where as the dry stayed steady through the entire process. I didn't make a starter and only added one packet. So I'm pretty sure I made a mistake or two
