Description

A super clean, super-fast fermenting strain. A low ester-producing strain that results in a balanced, neutral flavor and aroma profile. Alcohol-tolerant and very versatile for a wide variety of styles. Similar to California Ale Yeast WLP001 but it generally ferments faster.

Attenuation: 76-83%
Flocculation: Medium to High.
Optimum Fermentation Temp: 65-68.
Wyeast Equivalent: 1764 PacMan

As the description says, this yeast is very clean and ferments quickly. I use it frequently. With a starter, it gets to work quickly and can convert even heavy beers in a shorter period of time.

I found out the downside to the first pitchable yeast grown in its own sterilized packet; quality control. It seemed not quite right when I pitched it into the fermenter, then it never fermented. I am now heading to the nearest brew store (50 miles each way) with minimal inventory to find a substitute yeast to get the batch bubbling.

While not a large volume customer I have brewed many batches over the years using Morebeer ingredients. This is the first true hiccup that was not my fault. I don't know how common this is, but Whitelabs should be made aware. Time to lean on them a little Morebeer!

White Labs nails it again
I stumbled upon this yeast a few years ago when my LHBS was out of WLP001 and I have never looked back.
Formerly San Diego Super yeast, the intended style is evident and it's definitely up to to that task. It's an excellent attenuator and a great flocculator which produces some seriously clear West Coast IPAs. There's no question that it finishes clean and accentuates your hops but something about this strain is more nuanced with regard to the malt profile than other American yeast strains I've tried.
No matter what, build up a healthy 2L starter and you've got a sure-fire winner for your next West Coast IPA.

Had OG of 1.084 and used this yeast. FG was taken down to 1.009. Could not believe how much this dried my beer out. Very clean too with no off flavors.

My new house yeast
Super reliable and always attenuates. Produces a nice clean ale for any style that you want a clean profile. It also accentuates hops for IPAs and APAs. I recently made an imperial stout and it’s come out beautifully! Love WLP090

Tried this in annual Barley Wine
Made a 2 Liter starter with this yeast for annual barleywine.
This yeast was roaring in the fermentation bucket. Blew the lid off twice and I use blow off hoses in the lids. Then it went to just shooting foam out through the blow off hose until my airlock (bottle with water) overflowed.
Tasted good upon kegging, but won't taste again for several months.
Just be prepared for an aggressive fermentation.
