This strain is more fruity than WLP001, and slightly more flocculent. Attenuation is lower, resulting in a fuller bodied beer. This yeast can be used to ferment scottish ales because of its lower attenuation than its sister strain WLP001. Try this yeast with Pale ales and IPA's. For a great experiment try splitting your wort into two separate fermenters and compare WLP001 with WLP051. Let us know what you think. To ferment this yeast properly pitch at 62-65F and let it rise to 66-68F. Ferment for 10-14 days in the primary.

Fermentation Temp: 66-70F
Wyeast Equivalent: 1272 American II

White Labs , I love this yeast
This yeast California v is great. Brewed 11/25/19 and that afternoon it was fermenting. White labs is by far my favorite. More beer you guys are great to.

NE ipa turned out great
Put together a hazy ipa with citra and el dorado. Made a 2L starter while using this for the first time. I kept the fermenter at 75 degrees for the duration and it took off in no time.

Very different flavor profile and quite enjoyable with this one. Had those normal tones of pineapple, dried mango, orange pith; but had a subtle flavor of cherry which threw off all tasters. Quite enjoyable, and will be testing this again in a bigger ABV to see what happens.

I think White Labs has lost me
I'm not a fan of the Pure Pitch packets I want the old vials back. Instead of cracking the cap to let the pressure out now you cut the top and hope the yeast doesn't get on your shirt. It was harder for me to see how well the contents were mixed and if I got it all out and it was harder to pour it into my flask. I've used white labs for a long time but I'm changing to smack packs.

Produced a great IPA with this
I produced a very nice IPA with this yeast. Made a 2L starter, pitched at 72?F and had maybe a day of lag before vigorous fermentation. Beer came out very clean, crisp, with great hop flavors. Went through 5 gallons in less than an hour at a party!

Great yest for temperate environment
I love this yeast for brewing in San Francisco. I put is in my garage and need no temperature modifications at all. A lot of the time, I use this in place of other prescribed yeasts for a more -fruity flavor.

Nice yeast
Used for a summer ale. Leaves a slightly fruitier taste than the 001. Made a starter and pitched at 68 degrees. Had active fermentation for 48 hours, then it seemed to stop completely. I think for this beer style I will be sticking with the 001.

Must have IPA yeast
VERY FORGIVING with low esters, slighty citursy. It likes to be warm, great for summer time brewing. Crashes gravity cosistantly, just make a good starter.

Leaves more flavor than California Ale, but needs a little more attention too..
Great yeast that leaves a little backbone to the beer. A little tougher to keep going and to fully attenuate, but still a great yeast.

Great flavor comes at a price
This yeast has an amazing friuty flavor, my favorite yeast for Light Ales thru IPA's, but it comes at a price, it's not the easiest yeast to work with. This yeast needs a lot of attention and just the right condtion, or you could be tossing the batch.

Kind of a fussy yeast
Cal Ale V has a nice flavor profile, a bit more fruity than 001 and a bit more malty and slightly sweeter finish due to the attenuation. It flocs out nicely. However, it's a fussy yeast. If you get even a tidbit below the temp, it just goes on hunger strike. It's a giant hassle. It also flocs rapidly without much cooling which makes temp control even more important.

If you don't have the means to do a fairly precise temp control, don't use this. Get 001 or 1056 instead.

It's a better flavor than 001, but the hassle far outweighs the tiny bit of flavor difference.
