Description

This yeast is all about the malt! It is the choice for fermenting Scottish-style ales that are low in fruity esters and really big on malt flavor. Produces a slight smokiness. It's also good in rich, dark ales, like Oatmeal Stout. We have also had some customers make some good Barleywines with this strain. Does not ferment well under 62F.

Attenuation: 70-75%
Flocculation: Medium
Fermentation Temp: 65-70
Wyeast Equivalent: 1728 Scottish

I just purchased the scotch ale kit and a pack of wlp028 yeast should I use more yeast? Some have mentioned slow yeast activity and with the high OG, just trying to head off any issues. New to this and excited for this awesome ale....

BEST ANSWER: Generally, when the beer is expected to be at or over 6% ABV, it's best to use at least 2 packets of yeast or make a yeast starter.

The yeast is "at work" now. Room temp is 66, the bubble rate is steady. So far, it is what I hoped for.

White Labs 028 Yeast
Recently I was about ready to brew another batch of beer. I had not done so since Feb., and it has been painfully clear since then, things have changed, the Pandemic being the biggest one.
My local brew shop said that they were out of WPL028 due to having to discard expired yeast. They thought it would be at least unit October for restocking. So I tried online at MoreBeer. The order initially went through, but then I received an email stating that it was not available. The agent asked how I wanted to proceed, and I replied to just let the order remain in process.
Thinking it would be until at least until the end of Oct. before it was restocked, I decided to just wait. Less than two weeks later, I received an email from MoreBeer that it was going to ship in two days, which it did.

Kudos to MoreBeer for operating in a very challenging environment, the Pandemic. Yeast has arrived and I will be brewing in the next few days.

Great high-gravity yeast!
This stuff withstood a high gravity brew (scotch ale) that I kept throwing in sugar additions to for 2 weeks. . . theoretical gravity was around 17% and it worked right to the end! (NOTE: I did create a massive starter with it also)

Perfect for Strong European Ales
Good flocculation, excellent alcohol tolerance. Perfect for 18th Century porters, high octane Scottish ales, Russian Imperial Stout or other milk stouts. This yeast also performs very well in the ambient temperatures of the SF Bay Area.
