Description

WLP518 Opshaug was originally sourced for White Labs by world traveler and blogger Lars Marius Garshol, who has authored several books on farmhouse ales and historical brewing. This kveik strain was isolated from a mixed culture which belonged to Harald Opshaug, a farmhouse brewer in Stranda, Norway. This strain was originally used in the 1990s to produce several kornøl-style beers. It is a clean fermenting yeast and has tolerated temperatures up to 95°F (35°C) while finishing fermentation within three to four days. The hop-forward, clean characteristics of this strain make it ideal for IPAs and pale ales.

Optimum Fermentation Temp: 77–95°F
Alcohol Tolerance: Medium - High (8–12%)

I normally use dry yeast and a starter. Will this pack be sufficient for a 10 gallon batch of approximately 1.050 OG or should I plan to make a starter?

BEST ANSWER: This yeast is a bit of an anomaly. Usually we recommend using 2 packages for a 10 gallon batch but we have seen this strain do just fine when underpitched at nearly 1/2 the rate we would consider the minimum. By using less you will get more ester and a slower start to fermentation, but it will definitely catch up and do a good job fermenting the whole batch.

Hot and aggressive.
I have a former student of mine that is a head brewer at a local Brewery. He convinced me to give this a a try b/c it's his house yeast. I must say that this is the most aggressive yeast yet I have ever tried. I did a 1.5 liter yeast starter for a 1.070 NEIPA I was brewing. I had major fermentation in 6 hours at 82 degrees. The beer rose to 92 degrees at day 3 but was still chugging. Biotransfermation was on at day 2. This maybe my summer ale yeast from now on. The beer is a little sweet on the end but there are NO off flavors from the yeast.

I love this style of yeast. It works for just about any style. I even used it to primary ferment a sour before adding brett... very reliable.
