Description

490 - 566 °L  - Weyermann® - Carafa® Special Type 3 is a dark-roasted specialty malt made from high-quality spring barley.  Where malt-based bitterness is not desired, Weyermann® Carafa® Special Type 3 is a perfect fit.  As the de-husked version of Carafa®, it produces rich color, body, flavor and aroma without the harsh flavors and astringency typical of dark-colored grains.

It's a key part of my stout recipe. Less bitterness/astringency from the malt than if you use black patent or roasted barley.

Nice Surprise
Been awhile since needing brewing ingredients. Placed an order with MoreBeer. (Spent WAY TOO MUCH money at MB over the years as MB is one of my top “go to” places for all things brewing ;-)) Nice surprise, and a, why didn’t this happen before moment, when seeing the 5-pound bags of ingredients as every bag has a zip lock. Small bag change for a HUGE improvement. Way to go MoreBeer!

One thing that hasn’t changed since my last ingredient purchase from MB: Fresh quality ingredients delivered in a timely manner.

Sweet and Creamy
This malt makes a beer that is almost more of a milkshake than a stout. Sweet and creamy. Unlike English roast barley, no bitterness and no smoke. Dangerously drinkable. I used it at .25 pounds with 6.75 pounds 2-row, and it resulted in a dark ale on the sweet side. Then I used .5 pounds with 6.5 pounds 2-row and got a sweet creamy stout. Both beers were super tasty and drinkable. But those beers were not the Celtic fertility rite around the bonfire that I love from a smoky English roast barley. I prefer this stout in summer, cold and great with burgers and guacamole.
