Description

1.9 °L - Viking Malt - Xtra Pale is a modern 2-row base malt designed for very light-colored ales.  While it works great as the base malt for any ale, it is particularly perfect for today’s extra light colored pale ales and IPAs.  

Xtra pale is germinated like a pale malt to have a high degree of modification for easy brew house conversion. However, it is then uniquely Kilned like a pilsner malt for a very light color in the 1.7 to 1.9 Lovibond range. The result is a malt that easily and quickly converts like a true pale ale malt, but is as light or lighter than most Pilsner malts.
 
Morebeer! Pro worked with Viking to design this malt based on numerous customer requests. Unique light-colored barley varietals were chosen and the germination and kilning processes were selected to get the best of both worlds.  Compared to other 2-row base malts on the market that were originally designed for big breweries, and are neither true Pilsner or true Pale Malts, Xtra Pale was specifically designed for light, craft-brewed ales.

BEST ANSWER: I've never detected DMS using this malt, and I use an all in one electric system, so my boil is very tame.

Much prefer Breiss
Breiss Brewer's Malt is my go-to base malt - I get great efficiency with it. Viking not so much. Main reason I came here to write review is today after thinking my Barley Crusher had bit the dust I finally found why I wasn't able to mill - a small stone in the Viking malt! I guess could happen with any brand, but combined with low efficiency no more Viking for me! Only had this because was sent to me as part of an all grain recipe kit.

No wonder the beer turns out so delicious
This Viking 2-Row is so sweet and crunchy and delicious I could eat it as a snack. Yes - it's that good! Lends a slight sweetness to the wort. I'm using it in a chocolate milk stout. I highly recommend it!

My "go to malt" for most brewdays!
No issues, no off flavors, very low price. Sometimes I notice a few sticks and stuff that shouldn't be there, but it is grain and I am not buying it in 55 lb sacks...so it's been repacked. No worries, those things float during mash in. The grain reliably gives me great taste and hits the numbers. Recommend.

Low Efficiencty
I have brewed 4 batches with this malt and have yet to hit a normal efficiency. Needless to say it has been frustrating. I did some homework on the Diastatic power and it is an obscurity to the consumer and have seen it state that it has a minimum of 80. Breiss 2 row is 140. Based on those two numbers logic says their malts just are not yielding the efficiency the average homebrewer is used to seeing. The taste was good and I really gave it a shot, but I'm going back to reliability.

A very nice base Malt
The Viking malt was highly fermentable it finished faster in the primary fermenter then the same recipe with American Malt. As it came out from what dryer in the future I am using a little dextrin malt with it's about 20%.

my go to grains
I use this as my base malt, it's sturdy, malty and consistent with it's flavor and color. This malt works great for IPA's and lighter hop forward beers.
