Description

Torrified wheat is a pre-gelatinized unmalted brewers wheat that can be used as a cereal grain/adjunct in the mash, and can replace malted wheat if you desire. Increases body and head retention, as well as adding a very slight toasted flavor. We recommend using Rice Hulls with this grain to avoid a stuck mash.

Does torrified wheat need to be milled before mashing? Various online forums say no, yet the Breiss spec sheet recommends a medium-coarse crush.

BEST ANSWER: It comes in two forms - whole kernel and flaked. If whole, then I mill along with my other grains, if flaked I mash as is. I find that milling flaked wheat, corn, oats increase the risk of a stuck sparge. In both cases add some rice hulls if it is over 15% fo your grain bill.

BEST ANSWER: Torrified wheat is pre-gelatinized and this doesn't require milling in order to release the full sugar content of the product.
