Be aware that a lot Tartaric Acid available to home winemakers is artificially made, comes from China, and does not integrate into the wine as well. 3.8g per gallon adjusts acidity by +.1%. 
As a note: some tartaric acid will drop out of suspension as potassium bitartrate if you are doing any cold stabilization. You might want to re-test total acidity after cold stabilization.

BEST ANSWER: Not sure as I'm not a chemist ... but I've kept my 2016 acid in a cool, dry place and will use it for this year's harvest. It seems fine to me.

Great for adjusting must for making quality rosé style wines.
This is a great product because you can add the tartaric acid without increasing the other acids in the wine - you get greater control over the final product than with an acid blend.
