What happens when you make a single malt and single hop IPA using Califonia Select Malt mixed with Simcoe® hops? Deliciousness, in a glass. How many weeks in fermenter? 2 or 3? I used Cali Dry Yeast and have been fermenting at 67 degrees. Fermentation took off and was vigorous and seemed to finish after 3-4 days. OG was 1.062. Coming up on 2 weeks this weekend. I am wondering if I should raise the temp a bit or let it sit for longer. Thanks!

BEST ANSWER: This yeast usually finishes up a beer of this gravity in 10 days. A 4 day fermentation is fast but not worrying at 67 degrees. If the foam is gone and the yeast are sinking then they are done fermenting and you can start dry hopping. (Some belgian yeast strains truly limp over the finish line for 2-4 weeks.) Go ahead and take a sample and see how the beer tastes. We are looking for any buttery flavor or slick mouthfeel, and a stable final gravity. The Butter flavor is the last thing the yeast clean up before stopping fermentation and raising the temperature is a good way to help them finish this step. If the gravity is the same, say, on Thursday as it was Monday then you are 100% good to package, dry hop, or barrel that beer. Cheers!

My Staple Brew
This is one that I like to keep on tap. It's my staple IPA. It's very clear, easy to drink. It has a fruity front end and bitter back end. A lot of citrus notes. Pairs with just about anything.

Brewed with Anvil Foundry.

Great tasting, simple IPA
Made this for the summer and everyone loved it. Great combination of bitterness and malts. Highly recommended for a simple, delicious brew!

Simcoe is amazing
I'm now in love with Simcoe hops. This brew (All Grain) turned out amazing. Pretty bright color and a nice citrus aroma/taste. Not overpowering and very enjoyable :)

Love it!
My all-time favorite beer to make and drink hands down!!! Best taste and perfect for the summer time. All you smell is fruits from the simcoe hops. Going to add mangos to the last 5min boil next time I make it and see how it turns out. I also used the cellar science yeast CALI and worked perfectly for fermentation Temps up to 78F. I'm fermenting in a coat closet and it gets warm inside during the summer.

Beautiful
This is my fifth all grain beer, and easily the best so far. Clean, Simcoe taste. Not overpowering, but plenty of punch. Nice light color as shown in the picture. Just perfect.
