Formally US-56, US-05 is a strain of yeast that creates that classic American profile of clean malt, crisp taste, low diacetyl, and ability to ferment in a wide range of temps. Look for US-05 to be the next popular dried yeast.

This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.

Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

  • Alcohol Tolerance: 9-11% ABV
  • Optimum Fermentation Temp: 64-78°F

Good for Oatmeal Stout
Worked great for a dryish oatmeal stout. Fermented at around 68. No distracting fruity flavors.

Seems to need a starter unless you buy a lot of yeast.

Stir Plate Success
I've had bad experiences with receiving dead yeast when buying my preferred liquid yeast. I've invested in a flask and stir plate and couldn't be happier with the results using Fermentis Safale.

When liquid yeast is unavailable…
I’m a believer! I wouldn’t have thought that I would use dry yeast. I always thought dry yeast was inferior to its liquid counterpart. I was wrong…this yeast performed perfectly. A thorough ferment, very clean and the beer finished clear. I will definitely use again!

Stalled fermentation
Last 2 batches this yeast stalled. Same temp and recipe I always use. I'm switching to w 34-70 . I no longer recommend us 05.

This is a very fast acting yeast
Works extremely well!
For my first Ale I rehydrated the package according to John Palmer's Method. No starter here. Pitched into fermenter when at pitching temp. Activity in less than 14 hours. This beer finished out in less than two weeks and tastes great.

After three days of active fermentation, drew off a pint of wort from fermenter to make a small 1 iltre starter for my second batch I was brewing next day. I pitched this starter into the second batch and saw very active fermentation in about 14 hours again. This batch finished fermentation in ten days from pitching. OG 1.046 down to 1.006 in eight days. Left for two additional days with no further drop in gravity. Beer finished out at 1.006. Now that was quick and tastes great before bottling.

I've collected and washed this yeast from both fermenters and both have a lot of yeast in each for future batches of Ale.

I would definitely keep this on hand from now on.
