Formally US-56, US-05 is a strain of yeast that creates that classic American profile of clean malt, crisp taste, low diacetyl, and ability to ferment in a wide range of temps. Look for US-05 to be the next popular dried yeast.

This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.

Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

Always keep the 05 on hand
The o5 has been a go to yeast for several of the ales we brew and we have always gotten great results. We nicknamed it the NoFale yeast as it always produces great beer

Great Shelf Life!
I took what I thought would be a short break from brewing to handle some family issues in 2014, and just got back to brewing in 2018. I had ten packets of this yeast in the fridge dated 2014, and against my better judgement, just used it to brew a 25 gallon batch of Christmas Ale. I proofed it, and it looked ok, so I decided to try it and see how it performed. I figured it was probably pretty weak after that long, so I double pitched it (dry, right out of the packet and into the wort) just to make sure I had enough live cells and boom! After four days of vigorous fermentation the job was pretty much done. A few days later I had a nice batch of tasty ale. Based on how vigorously it fermented, I don't even think I needed to over pitch it. So, aside from the fact that this is a great yeast to use for a wide variety of beers, it's a good one to stock up on without worrying about how soon you're going to use it. Just keep it cool, and you can count on this yeast WELL past the manufacturer's stated life expectancy.
