Formally US-56, US-05 is a strain of yeast that creates that classic American profile of clean malt, crisp taste, low diacetyl, and ability to ferment in a wide range of temps. Look for US-05 to be the next popular dried yeast.

This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.

Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.

I live in the tropics and have to import all my ingredients in airplane luggage. I'm sure liquid yeast is great, but my circumstances make it very impractical to use. This yeast is much more stable and give me amazing results every time. I just vigorously whisk the cooled wort to oxygenate it and then pitch 2 packets of this onto the foam. Fermentation takes off like a rocket every time even though I'm fermenting at a controlled 18°C.

Never have a problem with this yeast. Gives a clean taste, and I wash it several times to reuse. Turns into a real beast!

Versatile Dry Yeast
I can't predict my brew days so easily, so dry yeast offers convenience over liquid: it stores better and has higher cell counts, and you don't typically need a starter. I use this one the most as it is a good choice for virtually all American style beers. I brew west coast IPAs, pale ales, brown ales, and cream ales with this one. For an NEIPA dry yeast option, I've seen some suggest S04, but take my word, if you load galaxy or mosaic into a beer brewed with this yeast, you'll pour yourself a mouthful of delicious. Just close your eyes and pretend it is hazy.

Reliable transportation from wort to beer.
It's safe it's reliable. It's not sporty or luxurious but it will definitely get you from point A to point B. Keep a spare packet handy in case your liquid fails.
