Homebrewers love this commercial English Ale yeast for its big, clean flavor; its rapid fermentation; and its highly flocculant character.

 
Widely recommended for practically any American or English style beer, S-04 yeast a rapid starter and finisher which settles out extremely well, leading to a clean finished beer. Great to keep a few packets as back-ups or just to use as a less-expensive alternative to liquid cultures.
 
This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.
 
Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
 
Recommended temperature range: 64F-72F.

What is the alcohol tolerance of this yeast? I didn't see it mentioned on the TDS.

BEST ANSWER: At least 8% - because that's what my imperial stout came out as. This is a pretty great yeast. It's crazy fast (control ferm temps) and the yeast cake clarifies into concrete at the bottom of the fermenter. Mostly I use US-05.

worked great with Irish Red Ale
I fermented under pressure at 8 psi and it worked great. FG flatlined after only two days! I let it go for another day just to be sure. Result was very successful batch. I am a convert to pressure fermentation.

Worked great

Perfect for my Recipe
I use this for most of the ale that I brew and recommend it for any English style ale, such as amber or stout. Lag time is about 4 hrs and it completes within 4-5 days. it attenuates nicely. I tried liquid yeast and found that the lag time is much longr (up to 12 hrs or more.) I do switch to CALI for American style cream ales of summer wheat and to lager yeast for lagers, but I use this for everything else.
