Why is the total volume to go into the ferrmenter not on the instructions. is is 5 gallons? is it 5.5 gallons? something else? what is it?

BEST ANSWER: Hi John - following the instructions you should end up with roughly 5.5 gallons in your fermenter. 3 gallons of cool water are added to the fermenter, and 3 gallons are used during the boil. You will have roughly a 1/2 gallon of boil off, and a total of 5.5 gallons of wort after transferring to your fermenter.

Yeast
I bought this kit and all was good except the yeast, it did not work. It sat for three days with no result. Luckily I had more yeast and pitched that to make it work, that started working in less than a day.
If you buy one of these kits, I suggest you buy yeast separately.
Also, the bad yeast that came with the kit was Cali. Although the date was still good, I'm thinking that the box kit wasn't stored correctly and the yeast went bad.
Also, the yeast specified in the recipe was Fermentis Safale US-05 not Cali.

Everything you need and more. Great kits!
I love these kits. They come with everything you need, grain bags, yeast and priming sugar. I highly recommend the Palmer kits.
